Maple-Bourbon-Blue Sweet Potatoes

Ingredients:4 medium sweet potatoes, cut into 1/2-inch slices1 tablespoon olive oilSalt and pepper4 tablespoons butter, cubed2/3 cup maple syrup1/3 cup bourbon4 ounces Castle Rock Organic Artisan Blue Cheese, crumbled (2/3 cup)Directions:Heat oven to 425F.
