The patriots have become the most dominant dynasty over a sustained period of time in nfl history. And it would not have happened if Bill Belichick did not resign after one day. Growing up in oklahoma c shepards First Hospitality job was washing dishes in a japanese restaurants. A chef position opened up, and before long he was hooked. Its interesting you have a lot of food. What do we have here . We just wanted to go a couple of things from the book. Kind of shows the diversity of our city. So a little japche, a korean sweet potato noodle dish, an g eggplants dish. Key to the city, the fajitas, always, done in the vietnamese style. But i want to start with the book because in it, its not just the recipes, you talk a lot about these immigrant populations and their food and why its so important. What drew you to that . It was learning more about our city. And so when we started talking about the book, a lot of times people focus on when you talk about local, the aspect of local food, right. Okay, where are your apples from, your lettuce from. We wanted to focus on the cultures that existed in your city and learning more from that. You can be part of your community and learn and celebrate everybody. You went as far as vietnam to really sort of flesh all that out. Yeah. We decided that we needed to take a trip to vietnam so i could learn more about houston. Because thats a lot of we have one of the largest vietnamese populations in the city. I wanted to know where is that going now. And so it was we spent a couple of weeks going up and down and really learned a lot about houston. Its one thing people outside houston, people dont understand, is first how diverse houston is. Second, how great the food is. Yeah. Including that over there. Can you talk more about that . It was one of these things where we wanted to do this dish, and i was talking to my pastry chef. I really like green curry, and i think it would be delicious in pancakes. She was like, well, what kind offer is subpoena this based on . Kind of syrup is this based on in . Sweet soy. Salt, lime zest and citrus, candied peanuts. One of those perfect desserts. When you talk about the different foods in houston, one of your restaurants thats fats fascinating, onefifth. Each year its been a different cuisine. Youre on your fourth now. Yeah. Isnt there temptation at the end of each year to keep it going . How have you been able to manage that . If its working, why not keep it going . You know, it was the idea that it would be the playground to figure out what we wanted to do next. What was the next restaurants . It was the opportunity that you dont normally get. You spend a lot of normal into a restaurant, you hope it works. This we could see by running it for 11 months, does it is it good . Do we do this in the future . Yeah. And so yeah. I mean, we just did the Eastern Mediterranean was really popular and successful. But it was hard to change. We had to go. You got to keep going. Its gulf coast now. I really that, too. Year five, i have to make a decision soon, but i have no clue. Love it. Well weigh in i dont know. How do you decide that then . Its you know, its talking to the chef and the staff, talking to everybody. There and seeing what theyre passionate about. If nobodys passionate about it, it doesnt work. Is that how you maintain quality and control as you expands and open new places . Just passion . Yeah. You cant teach heart. And thats what we talk about all the time when we go through hiring processes and how we talk about our staff. And you cant teach heart.
