Erin go bragh! Irish Stew is a lamb (or mutton if you can find one) and root vegetable stew native to Ireland.
True confession – my grandmother was English, not Irish, but her Sunday leg of lamb dinner was legendary, and the lamb stew that would inevitably follow the next night was what childhood memories are made of. She would use the leftover lamb leg and any leftover meat and stew it with onions and garlic for hours to make the most amazing broth. Then, she would add potatoes, carrots, and barely… I still remember walking into her house and getting hit with the dreamy aroma.
