Springfield s Three Twigs Bakery & Bistro opening on April 24

Tim and Emily Lewis opened two new eateries in full COVID-19 dine-in ban mode. So they figured a month was ample time to relocate their established bakery, especially since such restrictions have all but been erased. But the Springfield couple behind Three Twigs Bakery & Bistro are finding government regulations aren’t the only hurdles to opening a business a year into the pandemic. The public will get its first taste of the bakery’s new home at 3429 Freedom Drive April 24 two weeks later than the Lewise originally planned to begin dine-in services. And Emily is calling even that milestone more of a “celebration” than an actual opening.

MOD Pizza, Million s Crab delaying opening in Springfield

Spokespeople for both brands confirmed early projected opening timelines have been pushed back. Million’s Crab won’t be opening at 2100 West White Oaks Drive until March now. November 2020 was the original projected opening for the Cajun seafood restaurant that focuses on seafood boils. Million’s Crab began with a single restaurant in West Chester, Ohio, last summer. Today there are four locations and nearly a dozen openings planned in Illinois, Indiana, Kentucky, Minnesota, Ohio and Wisconsin, according to the company website. Planned Illinois locations include two Chicago addresses in addition to Springfield. The Seattle-based MOD Pizza has pushed the opening date back to May for its first downstate location in the new duplex at 2401 Wabash Ave.
