If 2020 has sparked a desire to bake more than ever, a new flour from Bay State Milling of Quincy might be appealing. Several months ago, the company introduced Flourish, all-purpose flour with five times more fiber than unbleached white flour — ¼-cup yields 6 grams of fiber compared to 1 gram for regular all-purpose. The flour is produced from fiber-rich wheat grown by family-owned farms in the Pacific Northwest, upper Midwest, and Arizona’s desert region. It’s then milled into flour higher in prebiotic fiber and lower in carbs that adds nutrition to your loaves of bread and baked goods. Go to Nybakers.com or Stan Ginsberg s web site, and read their definition of dark rye.  It s not the same thing that other millers call dark rye.  To other millers, dark rye is just another name for whole rye or 100% extraction rye.
To Ardent/Baystatemilling/NYbakers/Ginsberg, dark rye is not the same as whole grain rye.  
To Ardent/Baystatemilling/NYbakers/Ginsburg, dark rye is rye with some/most of the endosperm removed. Therefore, the bran and germ constitute a higher than normal percentage of what is left.
Why remove some of the endosperm?  Because that s how they make white rye or light rye.   ....

As people start baking cookies, cakes, gingerbread and other traditional holiday treats, Bay State Milling s newest offering aims to add a functional edge: fiber.
Last month, the company launched Flourish, a high-fiber, all-purpose flour targeted at consumers. The company primarily works in the B2B channel, creating grain ingredients for manufacturers. Flourish is made from high-amylose wheat, a high-fiber variety of wheat that Bay State Milling has exclusive rights to farm in North America. Flourish behaves and tastes almost exactly like regular all-purpose flour, the company said, but it contains five times the fiber.
Jillian Wishman, strategic marketing manager at Bay State Milling, said the family-owned company s mission is to deliver healthy and affordable grains. And as only 5% of people in the U.S. are getting the recommended amount of fiber in their diets, Wishman said it s a great opportunity to launch a flour that allows consumers to increase thei ....
