When Chinese immigrants came to the United States, those who cooked for a living adapted the recipes they knew to match what local ingredients they could find and the palates of the folks they were feeding. How popular North American-Chinese dishes such as chop suey and chow mien were created.
That was also the case for egg foo young, which evolved into being like a Chinese-style omelette that was either folded or shaped into a pancake-like shape. Mixed in to the beaten eggs used to make it, either before or during cooking, were other ingredients.
When egg foo young was first being made, those other ingredients were basically whatever the cook had on hand, perhaps it was mushrooms, cabbage and some form of protein, such as ham or chicken. ....

MONTREAL Feigang Fei doesn’t like to boast about the orange beef at his restaurant in downtown Montreal. As a matter of fact, he doesn’t much like it.
“Comparing to our General Tao Chicken, this one is not THAT good,” reads the description on the online menu of his restaurant, Cuisine AuntDai, under a glossy photo of the deep-fried beef. “Anyway, I am not big fan of North American Chinese food and it’s your call.” ....

(CNN) Feigang Fei, owner of Cuisine AuntDai in Montreal, wants to be honest with you.
The orange beef? Not very good, especially compared to the restaurant s General Tao Chicken. But Fei isn t a big fan of North American Chinese food anyway, so, It s your call.
And the sweet and spicy pork strips? Well, Fei has high expectations. It was one of his favorites in China.
Since I have so high expectation on this dish, I am not a huge fan for our version, to be honest, he states bluntly.
All this is listed on the online menu for AuntDai, which serves a variety of traditional and non-traditional Chinese dishes, with each item including a few lines of commentary from Fei. When Kim Belair, a writer, posted the menu to Twitter last week, Fei s descriptions quickly blew up, with tens of thousands of people enjoying his words. ....
