1â3 cup packed dark brown sugar
1 teaspoon lemon zest
1â4 teaspoon ground ginger
1â4 teaspoon kosher salt
1 teaspoon pure vanilla extract
1 pie crust (2 discs), homemade (see below) or store-bought
1 large egg, beaten
Combine the rhubarb, brown sugar, lemon zest and juice, ginger, salt, and 1â4 cup water in a medium saucepan. Bring to a boil over high heat, then reduce the heat to medium-low and simmer for 12 to 15 minutes, or until the rhubarb mixture is thick. Remove from the heat, stir in the vanilla, then pour into a heat-safe bowl to cool completely.

Liz and Larry Mcnamara are the owners of The Strand in Schroon Lake, in the southern Adirondacks. Normally, Schroon Lake is a bustling summer town, so they open the theatre from May through October. In 2020, because of the coronavirus pandemic, they never opened at all, says Liz.
