Emilitsa, the go-to spot in Portland for sophisticated Greek food since 2008, closed after the holidays because of the pandemic. The owners left an outgoing phone message making a vague promise that they would return to 547 Congress St. sometime in late spring. Then, crickets. Emilitsa’s social media hasn’t been updated in months, and that same farewell phone message is all you’ll get if you call the restaurant.
Well, I have mixed news for anxious Emilitsa fans. The good news is that brothers John and Demos Regas do, indeed, plan on reopening. The bad news is, you’ll have to wait until late summer, maybe longer. ....

When Henry Wagner was a child, his grandparents often took him to eat at Spurwink Country Kitchen, a casual restaurant at 150 Spurwink Road (Route 77) in Scarborough that has been around for 70 years. The restaurant, which is near Crescent Beach, Scarborough Beach and Two Lights State Park, was known for its “classic New England comfort food.” Wagner remembers eating corn chowder and pie – especially pie.  “Being a kid, you always remember pie,” he said.
Now Wagner will be the one serving the pie. Wagner, who grew up to become a chef, bought the restaurant (Uncle Don’s Spurwink Country Kitchen in its most recent incarnation) and has been renovating the building himself since February. On June 1, it will reopen as Hank’s, with a 21st-century look, menu and overall concept. “I took the building down to the studs,” Wagner said, “and rebuilt th ....

The Wrap: Waterville gets a new restaurant, and cocktails-to-go stay

Well, that didn’t take long. A new grilled cheese restaurant (slogan: “Sweet Dreams are Made of Cheese”) is scheduled to open in early May at 363 Fore St., the Old Port space previously occupied by Cheevitdee.
Cheese Louise, founded by three college students in 2018, began as a food trailer in New Hampshire. James Gaudreault, Ian Lubkin and Bryce Harrison have since expanded the business to include two food trucks and two restaurants, all in the Mount Washington Valley. (The trio also have an ice cream business called Freeze Louise.) They specialize in upscale grilled cheese sandwiches such as The Canadian, made with applewood-smoked bacon, Cabot cheddar, sliced green apples and maple syrup on Tuscan bread.
