After Mariachi's Dine-In moved to a bigger location, chef Angel Fuentes decided to stay put and start his own restaurant, Guapo Taco, influenced by flavors from his home, Monterrey, Mexico. The lamb birria is the star of the show.

At Guapo Taco recently, Chef Angel Fuentes described the Mexico street taco-based concept he developed over the past few months but did not plan to put into action. It’s not uncommon for chefs to daydream about creating new menus, he said.

Located inside the former home of Mariachi’s Dine-in, Guapo Taco would have remained a passing dream if Fuentes and Mariachi’s Dine-in owner Ashley Miller hadn’t recently parted ways just as Mariachi’s was about to move from its original home in a Riverside gas station to a new brick-and-mortar location at 5724 Locke Ave. that is now open. Without going into specifics about the business breakup, Fuentes said he and Miller are both in a good place, personally and professionally.

The Saline County Career Center parking lot looked more like a festival than student parking Friday, May 14, as hundreds of people stood in lines waiting for their turn to order lunch.
Students in Tracy Crumbaughs Entrepreneurship class organized the first Food Truck Day a culmination of a class project they had been working on since April. Six food truck vendors were on site, selling a variety of meals.
We did a whole food truck unit where they had to completely come up with the concept, Crumbaugh stated.

Students worked on marketing and a business plan, encouraging them to think about their types of businesses, their partnerships, menus and more. They also created logos and learned about the history of food trucks.
