Students in Tracy Crumbaughs Entrepreneurship class organized the first Food Truck Day a culmination of a class project they had been working on since April. Six food truck vendors were on site, selling a variety of meals. We did a whole food truck unit where they had to completely come up with the concept, Crumbaugh stated.
