Beneath the amber glow of Jax Fish House & Oyster Bar s lights, lead line cook Sami Slenker darted like a pinball between the confines of its buzzing galley kitchen Thursday afternoon. Pots of diced onions sizzled on a stove as Slenker gave them a quick stir. The calamari she had just breaded and popped in a fryer basket was nearly done. Soon, they d be seasoned, plated alongside dollops of mango-chile mojo and lime aioli and expedited to a nearby table. The chicken tenders were next bubbling in a separate fryer next to a basket of waffle fries. Like the calamari, they were soon out of their oil bath, seasoned and set next to containers of curried ketchup and an apricot habanero dipping sauce. ....

ESTES PARK A film center and museum dedicated to the horror-film genre has been given new life thanks to an extension of a state grant for tourism projects. Construction of the second phase of the $40 million center at the iconic Stanley Hotel that feeds off the Stanley’s haunted history including its role in the novel and subsequent 1980 film “The Shining” will begin this spring, hotel owner John Cullen said. The project’s green light came after Thursday’s unanimous vote by the Colorado Office of Economic Development and International Trade’s Economic Development Commission extended its funding deadline because of shutdowns and restrictions related to the COVID-19 pandemic. ....

Here’s a look at the many new things coming up. • Pickleball Dome opens Dec. 30. The bubble-tent covers the existing parking lot in front of North Side Social, 9633 Prominent Point (Powers Boulevard and Briargate Parkway) with eight pickball courts and a dining area. The menu will feature burgers, small plates, pizzas and breakfast wraps. Yellen has spotted a place in the heart of downtown to build a South Side Social, which he anticipates to be open in the spring of 2022.
