Veggie buffet highlights flavours of India

MYRIAD delectable dishes of the various states of India have become a hit among diners at the Temple of Fine Arts (TFA) Penang’s restaurant Annalakshmi.
The outlet offers at least 12 Indian dishes for its Friday vegetarian buffet lunch, with recipes rotating among Andhra Pradesh, Rajasthan, Kerala, Karnataka, Tamil Nadu, the Chettinad region, Punjab and even Sri Lanka.
In-house chef P. Sekar, 49, said he was told to feature cuisine from different states in India every Friday.
He took up the challenge with ease, having been attached to TFA in India, Singapore, Kuala Lumpur and now in Penang for the past 27 years. ....

For any person or publication wanting to envision a more sustainable way to cook, cutting out beef is a worthwhile first step. Almost 15 percent of greenhouse gas emissions globally come from livestock (and everything involved in raising it); 61 percent of those emissions can be traced back to beef. Cows are 20 times less efficient to raise than beans and roughly three times less efficient than poultry and pork. It might not feel like much, but cutting out just a single ingredient beef can have an outsize impact on making a person’s cooking more environmentally friendly.
Today Epicurious announces that we’ve done just that: We’ve cut out beef. Beef won’t appear in new Epicurious recipes, articles, or newsletters. It will not show up on our homepage. It will be absent from our Instagram feed. ....

I’m a vegan, but I’m also a realist. There’s no chance humanity is going to give up meat, en masse, anytime soon. That said, we can’t just wish away the risks of industrial animal agriculture. If we don’t end this system, soon, terrible things will happen to us and to the planet. Terrible things are already happening.
So this is going to be a column about finding a way to work with humanity’s growing appetite for meat rather than against it. All we need to do is replace the animals, or at least a lot of them. Technologically, we’re closer to that than you might think. What we need is for government to put money and muscle behind the project — just as it’s doing for electric cars and weatherized homes and renewable energy — so that the future happens fast enough to save the present. This is the hole in the American Jobs Plan, and it wouldn’t take much money, just a bit of vision, to fill. ....

This sweet and tart salad stands is a refreshing side dish or can be used as a salsa with your favorite grilled meats.
1 small ear of corn
1 small green tomato, about 4-6 ounces, diced small (about 1/2 cup)
3-4 ounces jicama, peeled and diced small (about 1/2 cup)
8 ounces cantaloupe, ripe but still fairly firm, diced small (about 3/4 cup)
1 1/2 tablespoons preserved lemon, or to taste
1 tablespoon chives, chopped fine
1 tablespoons extra-virgin olive oil
Kosher salt and freshly ground pepper to taste
1 dash of smoked paprika or chipotle chile powder, to taste (optional) ....

She says, for her, staying vegetarian was a personal choice that she made long back.
