Despite urban sprawl and industrialization, you needn’t travel far in Taiwan to see paddy fields. In 2019, rice was cultivated on 270,066 hectares of farmland almost 7.5 percent of the country’s land area, and only very slightly less than in 1903.
Per hectare yields now often exceed 7,000kg, perhaps six times greater than in the mid-18th century. Much of this progress can be credited to the Sino-American Joint Commission on Rural Reconstruction (JCRR, 中國農村復興聯合委員會), which channeled US technology and fertilizers into local agriculture after 1949. ....

If you’ve read a bit about the history of Tainan, you’ll have heard of Taijiang Inner Sea (臺江內海). Hundreds of years ago, when southern Taiwan’s coastline wasn’t as far west as it is now, this lagoon covered much of present-day Annan (安南) and Chiku (七股) districts.
In 1823, torrential rains shifted so much sediment that the islands at the mouth of the inland sea began to coalesce. Because this reduced the speed of river water flowing through the lagoon, silt carried down from the mountains started to accumulate. ....

Its opening lyric, Chestnuts roasting on an open fire, evokes images of Christmas – a wistful version of the holiday most of us have never actually experienced, because a blight caused the American chestnut tree, once the most predominant tree in the country, to go extinct.
Chestnuts were synonymous with Christmas in the United States even before the popular carol hit airwaves. In fact, they were one of the most popular ingredients in American dishes throughout the 18th and 19th centuries, and for good reason: the Eastern seaboard was covered in chestnut trees. ....
