Huntsville’s latest coffee option has wheels

There’s coffee to-go and then there’s to-go coffee. Huntsville barista Rachel Bush’s new venture is the former and does the latter. Her freethought coffee co., spelled all lowercase, is a mobile coffee stand that debuted May 6 at Greene Street Market.
When we meet up downtown on a recent afternoon, Bush is wearing a biker jacket and looks like she could be in a cool band. And when she’s talking about coffee, she sometimes sounds like a chemist.
She explains why mobile was the right platform for freethought, instead of a small permanent location. “Arsenal is gone. Hindsight is gone,” she says, referring to two defunct local food trucks. “There’s not really any coffee on wheels in Huntsville, so I wanted to create that concept to go to farmers markets and pop-up events.” ....
