In a small roadside smokehouse in Madisonville, Tennessee, Allan Benton crafts what top chefs across the U.S. consider the gold standard of country ham and bacon. The potent, provocative smell of hickory smoke draws in any visitor and anyone who tries the finished product.
Since Benton started the business 47 years ago, Benton’s Smoky Mountain Country Hams has become a Southern legend. His dry-cured and smoked hams and thick-cut bacon, made by hand the way his grandparents did, can be found on the menus of leading chefs throughout the South and beyond, including David Chang and Tom Colicchio in New York and Chris Shepherd in Houston. Reader Alan G. sent us a tip that Berkeley-based mini-chain Sliver Pizzeria known for its changing daily menu of one vegetarian pizza and one salad has plans for a new location on the ground floor at Alta Waverly apartment complex in Uptown Oakland. He spotted a public notice for alcoholic beverage sales that stated Sliver’s intentions to occupy suite B at 2300 Valdez St. It was posted in September. Nosh contacted Sliver, which confirmed that the new site its fourth restaurant, joining two others in Berkeley and one in North Oakland is still in the works. Sliver CEO Eduardo Perez (brother of Sliver founder Willy Perez, a Cheese Board alum) told Nosh, “We are excited for our new location in Uptown Oakland. We are currently waiting on our final permits. COVID has slowed down the permitting process. Hopefully, we will open by the summer.” ....

The pandemic did not keep the Good Food Awards from soldiering on for its 11th annual celebration of independent food and beverage artisans and the Bay Area was well-represented once again, with 27 local winners for products such as beer, charcuterie and cheese.
A virtual ceremony took place Friday in honor of 219 winners, who were judged among nearly, 2,000 entries during a first-ever virtual blind tasting. Among the winners, 44 come from California, and 55% are walking away with awards for the first time. ....
