Originally from Pisa, Italy, Chef Russo graduated from the Ipscat G. Matteotti culinary institute before going on to work at Michelin-starred restaurants and luxury hotels across Europe, the Middle East and Asia.
In January 2014, Chef Russo joined Rosewood Hotel Group as Chef de Cuisine before moving to Bvlgari Hotels & Resort a year later.
He moved to Ritz-Carlton in May 2017 and after two years with that luxury hotel company joined Mulia in Indonesia as Executive Sous Chef, a position he held for just over a year before joining Capella last month.
