(11 Jan 2021) Capella Ubud, Bali has appointed Nicola Russo as Executive Chef. Originally from Pisa, Italy, Chef Russo graduated from the Ipscat G. Matteotti culinary institute before going on to work at Michelin-starred restaurants and luxury hotels across Europe, the Middle East and Asia. In January 2014, Chef Russo joined Rosewood Hotel Group as Chef de Cuisine before moving to Bvlgari Hotels & Resort a year later. He moved to Ritz-Carlton in May 2017 and after two years with that luxury hotel company joined Mulia in Indonesia as Executive Sous Chef, a position he held for just over a year before joining Capella last month. ....
