In this case it is because the access to or from the Verbier pistes is more complicated and skiing time will be limited by the fact that you have to take lifts UP before you can ski down. You will have to check operating times very carefully or be stuck in Verbier and then have to take a VERY expensive taxi service to get back to your lodgings. Another reason is (in normal times) availability of bars, restaurants etc. Right now in Switzerland the only restaurants open are those in hotels and only registered guests in those hotels can access them. This is not expected to change until 1 April at the earliest. So unless you want self catering you will have to eat in your hotel. Take out is available but some hotels do not allow guests to eat in their rooms (at least if not using room service). From what you say though you seem likely to opt for self catering. ....
