Ajiaco is Colombia's signature, thick, fragrant soup, particularly popular in Bogotá. Three native potatoes small yellow criollas, purple-skinned sabaneras, and large white pastusas break down in chicken broth with shredded chicken breast, cilantro, big chunks of corn on the cob, and earthy guasca.
