Roasted Potimarron Thai Soup [Vegan]
4 cups of roasted potimarron flesh (taken from 2 potimarrons;
aka: Red Kuri Squash)
1 small cooking onion, chopped
2 garlic cloves, minced
1 lemongrass stalk, chopped into 2 parts
2 tablespoons Thai red curry paste
1/4 cup of water
4-5 cups low sodium vegetable broth, preferably homemade (start with 4 cups; can increase later)
