Restaurant News: Yua Ramen full of surprises, plus Mother's Day dining ideas

Located front and center in the Ranch Market complex (22511 Hwy 99 Suite 105, in Edmonds), Yua Ramen took us by surprise, a pleasant one assuredly. The dining room atmosphere is comfortable. Soft jazz music sets a mellow tone. Wait staff are professional, attentive and accommodating. The entire experience feels like fine dining, not grab-and-go cuisine.
We’d intended to order to-go meals, but sat down and enjoyed a leisurely dining experience.
List in hand, I did order much from the recommendations made by a reader, and the suggestions did not disappoint.

Okonomiyaki
A Japanese cabbage pancake, it was presented with drizzles of a mayonnaise dressing, and sprinkled with delicate flakes of bonito tuna. The dense batter incorporated shredded cabbage and the crisp exterior yielded to allow easy dissection of the round into wedges easily shared by our group. ....

Tick tock…Seattle Restaurant Week is in full swing and lucky folks we are, the rest of the month still offers plenty of time to get in on some of these fabulous meals. Here is the link to see choices and make your plans. Click on the restaurant’s name and you will see the menu of special fare, and the specific days and time slots honored by each location on the SRW deals, which differ for each location in the grid. Within Edmonds, for example, Sunday evenings vary quite a bit.
Reservations for our Bar Dojo dinner made us a bit giddy. For the first time in over a year, we’d sit at a table, with china and silverware, and deploy chopsticks that were not wrapped in crinkly paper. Choices for this spring’s event activated salivary glands and reading the item descriptions as we checked off the boxes on the screen of the computer heightened the anticipation. ....

Chicken-N-Mo wins our Slam Dunk Dishes tournament!

SPOKANE, Wash. The viewers have spoken, and the winner of our Slam Dunk Dishes bracket the local dish you voted as the best in the Inland Northwest is Chicken-N-Mo’s fried chicken!
It was a tense face-off between iconic eateries Domini Sandwich and Chicken-N-Mo, located right in downtown Spokane. In the end, Chicken-N-Mo edged out a win by just two votes!
Overall, 2,966 votes were cast in our tournament.
In the first round, many of the expected big name dishes won, with some upset wins the Luna Burger beat out Reuben from Madeleine’s 43–41, and the Zip’s Papa Joe lost in a tiebreaker decision against The Cedars’ Prime Rib, as did Clinkerdagger’s Pea Salad to The Scoop’s Ice Cream Waffle. ....

1 cup frozen peas, cooked to package directions
 
To make the dressing, combine all of the ingredients together in a large jar and shake, shake, shake! Keep refrigerated until ready to plate.
 
Heat the olive oil in a large nonstick skillet over medium high heat.
Pat the swordfish steaks dry with paper towels. Place the swordfish steaks, one at a time, in a large Ziplock bag and pound with a mallet to flatten to ¼” thickness. Season the fish on both sides with the salt and pepper.
Beat the egg in a pie plate or shallow baking dish. In another shallow dish, combine the crushed potato chips, Parmesan, and parsley and toss to combine. ....
