Urban Cookie Opens in Congress Park Neighborhood


One of Colfax Avenue s most distinctive buildings has a sweet new tenant. Earlier this month, Urban Cookie moved into the Savageau Building at 2260 East Colfax Avenue, where it s selling a range of cookies made by a baker with a long Denver pedigree.
Urban Cookie is the latest from Denon Moore, who founded Cake Crumbs Bakery in the 2000s before selling her business in 2017. At the time, her plan was to do something different and outside the kitchen but her heart knew baking was her destiny, Urban Cookie s website explains.
And so the little cookie cafe sprang up alongside Smith + Canon Ice Cream, making for a sugary destination at the corner of Colfax and York. Moore s creations include Urban Classics and weekly mystery batches, but even the classics go beyond standard recipes. The Amazing Peanut Butter (pictured), for example, trades in the basic pressed-fork pattern for a similar design created in peanut butter frosting, and the chocolate chip cookies get double ....

Tessa Delicatessen Adapts to Survive COVID Pandemic


Tessa Delicatessen owner Vince Howard thought he had left the world of dinner service behind when he opened his first sandwich shop in Los Angeles. Breakfast and lunch were a better fit for Howard s family life and desire to get out of fine dining.
He brought that thought with him when he moved to Denver. And the plan was going smoothly for the first few months at Tessa, which he opened at the end of 2019 at 5724 East Colfax Avenue. The chef/owner was slowly attracting a neighborhood clientele, and if business wasn t exactly booming, it was growing in a way that suited his pace. But that was before the pandemic, and before every restaurant in town was forced to figure out how to make ends meet with takeout and delivery only. ....

For decades, Denver has been a breeding ground for quick-service restaurants that have launched here before spreading throughout the country, creating buzz in each new city they enter. Chipotle, Qdoba, Garbanzo, Noodles & Company and Quiznos are just a few examples of the success of Denver originals. And for Coloradans moving to other states or traveling for work or vacation, a taste of home can often be comforting and familiar.

Randall Borne Reopens Randall's After Move From Welton to York Street


Borne, a native of Edgard, Louisiana, has been cooking Creole and Cajun cuisine in various locations around Denver since the mid-1990s. He ran a food truck and catering business called the Cajun King from 1994 to 2007, then took over Marion s Lounge at 4042 York Street for two years; that building has since been demolished. In 2009, he moved into the former home of Pierre s Supper Club at 2157 Downing Street, running it as Randall s at Pierre s for five years. If you drive past that address today, though, you ll now see only rows of modern, three-story townhomes.
After that, Borne moved Randall s into the New Climax, where blues bands and Louisiana cooking drew a cadre of devoted regulars. The windowless structure looks like a strip club and so wasn t particularly inviting for dinner guests, Borne said, shortly before the building s owner pulled the plug on Randall s in 2018. ....

Chef Jose Avila Opening La Diabla Pozoleria y Mezcaleria in RiNo


Chef Jose Avila can t be accused of putting all his huevos in one basket. In the interest of showcasing the vast variety of culinary styles from all over Mexico, Avila started out with Mexico City-style tacos as chef/partner at Machete Tequila + Tacos before departing to introduce Yucatecan specialties with his X Tabai Yucateco food truck and barbacoa de borrego in the style of Hidalgo with his Sunday-only pop-up El Borrego Negro at 3800 Morrison Road.
El Borrego Negro was a first in Denver, offering barbacoa from a whole sheep cooked overnight in a brick-lined underground oven called an hoyo. Many of his dishes at X Tabai are also tough to find in other Mexican restaurants around the city. And now Avila is bringing another first to Denver, this time with a full brick-and-mortar restaurant.
