李文达的“传奇”要从他的祖父，也就是李锦记的创始人李锦裳说起。
1888年，李锦裳在广东省珠海南水镇意外发明蚝油，创立李锦记。提起祖父，李文达曾回忆说：“祖父为了谋生，开了个小茶寮，兼卖蚝豉。有次煮蚝做蚝豉忘记熄火，锅中的蚝水变成了黑色糊状的液体。他舍不得扔，尝了一下，觉得味道鲜美，便放在茶寮里卖，这便有了蚝油和李锦记的诞生。”
李锦裳当年是个性情中人，他开茶寮时，来吃蚝的多是村中渔民。打鱼是“看天吃饭”的营生，很多渔民都是赊账吃蚝，等收成好的时候才还钱。可是总有很多人是欠账不还的，无论是真心没钱还是故意赖账，李锦裳都没去讨过债，反而每到年终，就把这一年的账单烧掉。李文达小时候常听父亲讲祖父的这个故事，他记得祖父的原话是：“不让账单成为下一� ....
