But after YouTube celebrity and now-Dallas-area-resident Mikey Chen featured the barbecue spot in a recent video, swarms of new customers queued up hours before opening time on Saturday. While the noodles are cooking, heat the oil in a soup pot. Season the chicken with salt and pepper and add to the pot without overcrowding. Add the shallot and saute until softened, 2 to 3 minutes. Add the garlic and ginger and saute until fragrant, about 30 seconds, then stir in the curry paste and coriander and cook until fragrant, about 1 minute more. Whisk in the chicken stock and lemongrass. Taste the stock, and if you prefer a spicier soup, whisk in 1 to 2 more tablespoons of the curry paste. ....
