Whether it was a big, blousy room putting on a seamless show even as it allowed the diners to take centre stage, or a self-consciously curated little space in which the punters’ intimacy with the process was essentially what made the food enjoyable, I remember the way that good (and, indeed, less good) restaurants used to make me feel: thoroughly, in-the-moment alive. Which feels like a lifetime ago, does it not? ....

Ostle is already at work transforming the building on the corner of Chandos Road and Brighton Road into the new space, with bread-making set to continue in what was most recently Redland Bakery. “So we’ve needed more space for ages but didn’t want to change Wilsons, but wanted to make it better,” Ostle told Bristol24/7. “These new premises will allow us more space to cook and process our own produce. It will also give people in our community access to the amazing produce and ingredients we are so lucky to use in the restaurant. “We hope to make rely good food more accessible and more affordable to a wider audience. Hopefully this little site will be the first step in doing that.” ....
Just five days after being able to reopen his restaurant in Bristol, Jan Ostle was preparing to close it again. The city, which was put into tier 2 last weekend, was yesterday plunged back into tier 3 ....
