The syrup
1. In a pot, add the water, sugar, lemon rind and cinnamon stick. Place pot over low heat and bring to a boil.
2. When ready, remove from heat and set it aside to cool completely.
For the base
1. Preheat oven to 160C fanforced.
2. Separate the kataifi pastry with your hands, making sure there are no knots and it fluffs up
3. Grease a 25×35 cm baking pan with butter and spread 1/3 of the filo dough. Drizzle with 1/3 of the butter
4. Repeat the same process twice more, until all of the kataifi and butter are done
5. Bake for 1 hour, turning shredded kataifi over 30 minutes into baking time so that it can turn golden on both sides ....

Eating your way through Lent: Rally's Imam Bayildi (stuffed eggplant)


Method
Cut eggplants into eighths, without cutting all the way to the base (It should look like an open flower)
Salt lightly, turn upside down and let any bitter liquid drain while you chop up the other ingredients
Finely chop the garlic, slice all onions in half moon shapes, coarsely chop parsley and place in a large bowl
Add can of tomatoes, passata olive oil, salt, pepper and sugar, tossing with a wooden spoon
Pick up each eggplant shake any access liquid and stuff as much of the chopped ingredients into the grooves
Lay each eggplant in a large saucepan and add any of the leftover ingredients over eggplants and drizzle of olive oil ....
