Before it could truly get out of the starting block in February, 
La Piscina, McGuire Moorman Hospitality’s poolside restaurant at Austin Proper Hotel & Residences specializing in fajitas and ceviche, had to close due to the coronavirus pandemic.
Now, it’s getting a chance to start over. The indoor-outdoor restaurant and bar located on the Proper’s fifth-floor pool deck has opened for dinner, with a menu focused on a roster of ceviches, oysters and grilled fish and fajitas served on tabletop planchas.
The menu also includes classic Mexican dishes like cochnita pibil and sharabl offerings like guacamole, queso fundido and nachos, all complemented by a menu of agave spirits. ....
