Serves 6.
Note: This soup has an Italian flavor, with farro and a little red wine, so feel free to throw in some thyme or rosemary, if the spirit moves you. Tamari may seem out of character for Italian, but it adds savory umami flavor that amplifies the meatiness of the mushrooms. Find farro with packaged grains and flour (such as Bob’s Red Mill products) or with bulk items at food co-ops. From Robin Asbell.
• 2 tbsp. extra-virgin olive oil
• 1 large onion, chilled
• 6 c. vegetable stock (see recipe or use prepared stock)
Boxes have been packed and food distributed, but donations are still being accepted by the Friendly Fellow Club.
While the clubâs annual Christmastime assistance has already been given out for 2020, local residents can still give money to help as the club prepares for the 2021 portion of the program.
FFC officials have noted that applications are up 50% and distribution has increased, which also resulted in an increase in costs related to more boxes and also rising food costs, which means the club is in need of more donations to ensure they can meet their expenses.
