A member of the executive team, Monterroso is responsible for business strategies for all dining outlets at the two properties, including RumFish Grill, where the restaurant s main attraction is a 33,500-gallon aquarium built by Animal Planet s hit series, "Tanked." He will also oversee planning, product placement and the delivery of a superior food and beverage product for TradeWinds guests.
