Over the years, Cornell Clark has gotten good at cooking barbecue, but he said he doesn t expect to ever outdo his father s ribs. When I was younger, I was watching Dad barbecue, and he was the chef and I was the taster, Clark said. As I got older, I put my own spin on the recipes, he said. I got a weird thing where I can taste it before I cook it.
Clark, 50, started a barbecue restaurant and catering business, The Smoke Doctor, in Hamburg Township, where he lives, last February before the pandemic hit.
He plans to launch a new mobile food trailer this spring.
