Reinspection is Required
Critical violations: Preparation cooler not keeping food at 45 degrees or below in cold holding - raw chicken at 59 degrees in cooler overnight and obviously spoiled (corrected - entire contents of cooler discarded - and cooler taken out of service until it is properly working).
Violations: Spice containers stored in the corner of kitchen stored uncovered, food not protected.
Interior of the ice machine dirty (corrected). Exterior surfaces of cooking equipment dirty with grease build-up and food debris along cookline.

Critical violations: Fruit flies present in several bottles of lime juice, cherry vodka, raspberry vodka, peach schnapps and vermouth (corrected, voluntarily discarded).
Violations: Lower shelving in walk in cooler rusty and in poor repair.
Chlorine sanitizer residual in dish washing machine at approximately 15 ppm (50 ppm minimum required).
Interior of microwave oven dirty. Small wire racks in kitchen holding various supplies dirty. Floors under cookline equipment, along baseboards, in walk-in cooler under racks and under bar dirty, have food residue and environmental soil. Wall area in dish area dirty with food soil residue.
