is as distinct as new orlean. between the food, the nightlife and the live music, there's literally something for everyone. and my new orleans adventure is starting with the foody tour along side james beard award winning chef john besh. >>it's great to see you. welcome to borgne. >>borgne is our coastal louisiana cuisine restaurant and it's really about the fish camp kind of mentality that myself and brian landry, my chef and my partner kind of grew up with. >>i think one of the things that make borgne special is that we actually get to highlight the spanish side of creole cuisine. there's this wonderful vibrant community called the eduanos who came over from the canary islands. and lot of their food helped shape what today's creole food is. >>(music) >>i'm actually very excited to learn about creole. excited to taste it. i know nothing about it. >>the food here is all about soul. like jump in, get your hands dirty, have fun with it. this is a dish that i've never seen served in a restaurant, but every fish camp in southern louisiana has a take on this. so what you have is local duck breast wrapped around a jalapeno with a little bacon wrapped around that and then they're grilled. >>hmmmm >>is that not the greatest thing ever? >>john besh is so charismatic and really lovely to be around. >>then we have louisiana bbq shrimp. has nothing to do with bbq sauce. has everything to do with lots of black pepper, beautiful jumbo white shrimp. it's that sauce underneath. so you have to dig in there. >>louisiana bbq shrimp is delicious. it was to die for. >>what if we eat that like soup? so i hear you have a book out. you are a busy man, i must say. >>you know it's fun. this book is all about the mentors that gave me everything that i know today and that i continue to pass on to my cooks. >>why is new orleans so special to you? >>new orleans is special because of it's people. it's the only indigenous cuisine left in america. you can open a menu in new orleans and you know exactly where you are and i love that about this city. >>so where else are we going today? >>we headed to cafe reconcile. >>(music) >>we're here at cafe reconcile. it's not just a cafe, it has a purpose. it helps the youth. >>the food is incredible, but the great thing about this is they take out rescues, give them a future in the restaurant business. working themselves from the kitchen to the front of the house where they really get a feel and education for the business itself. >>we need more of those around the world. >>(music) >>it's such a great organization and really helps the youths. >>i love it. i don't know where i would be without here. >>the kids at cafe reconcile are so special. they put everything they have into everything they make. and i think that really adds to the taste. >>the kids actually cook it. they all come together and they serve you. it's a great surrounding. everything about it. >>so this is the special of the day, jambalaya. >>that's right. and this is the first time you've every had it right. >>it is. >>so welcome to the iconic dish of new orleans. outside of gumbo, i can't think of anything that says new orleans quite like jambalaya. and this happens to be chicken, rice, andouille sausage, cayan peppers. >>the kids cooked a mean jambalaya. that was spicy. >>ooh, it definitely's got a kick. it's addicting. now i have room for one more place, so what's our final destination? let's do this. ok >>(music) >>it's food to share. you bring a bunch of people here, you get a bunch of bacos, and all of a sudden you're reaching across, having fun. it's a very communal food. and communal food is fun. and that's what new orleans is really about. though i think we ought to have a little competition. who can make the best ba chi. what do you think? >>ok let's do it. >>a food competition? really? like, he's an amazing world known chef. >>alright guys, here we go. ready to make some bacos? >>oh wow, they're so light and fluffy. >>so we take our shrimp and we have our creamy sauce right here. >>yeah, that's my favorite sauce. >>and we take some carrots and daikon and some nori on top. that is your creamy, spicy baco. >>alright. now it's our turn. >>i'll do wasabi first. >>no that's the hot sauce. >>(laughter) >>this is a big one. is that good? homosapiens. >>(laughter) >>especially the females. they grow these long claws. they got these long legs. they use those for bate. they get you in close then they try to snare you into this thing called marriage. >>oh my god. >>very, very dangerous. >>after a lesson in zoology like that, i'm ready to show captain bishop what this little lady's got up her sleeve. >>am i doing this right? >>yeah, pretty much. brian brings me something new every day. i'll get whatever's comin' up out of the ground. i have a vague idea what he may be bringing. sweet valentine and arugala. >>these look pretty light. i can help with these. >>right. here's the greens. right on, right on. >>lots of greens. >>yeah, lots of greens. it's that time of year, ya know. >>(music) >>so, my understanding when it comes to food, it's all about trust with you. what exactly does that mean? >>i don't know exactly what i'm going to do with anything at any given moment untill that little ticket printer starts printing up and someone orders a "trust me" and i design something on the fly for them to eat and enjoy and have fun with it. because it's all about making memories with food. >>a "trust me" dish is where the customer leaves their order up to the total discretion of the chef. you have no idea what it's going to be. >>before we get started, i have to let you know my friend bryan is coming to join me for dinner. so he will need a trust me meal as well. so he's going to have to trust me and i'll trust you. >>alright, good. yeah, exactly. >>a little circle. >>a little train there. a train of trust. >>i think it's really spontaneous and it's fun. like living on the edge a little bit. >>(music) >>so what's the key to earning someone's trust? (dog noise) hey, mi towel, su towel. more scent plus oxi boost and febreze. it's our best gain ever! >>tonight on 1st look i'm checking out new orleans and no trip to this town would be complete without visiting the legendary commander's palace for it's famous jazz brunch. >>(music) >>we've been coming here since we were children with our parents. it's just part of our lives. >>if you're coming to new orleans, this is one place you have to come to. >>commander's palace was founded in 1880 so we're starting to get the hang of it. my family bought it in 1969. we have done a lot of interesting things here. but one of my favorite things here is jazz brunch started here at commander's palace and it is the fun, kick in the rear, with great food and good friends. >>hey, hi. >>welcome, are you ready? >>i'm ready. >>come on, let's go in. >>(music) >>as soon as you walk in. they don't mess around here in new orleans. they give you your drink immediately. >>you have to start of course, with a famous gin fizz.. you have to get the fizz 'cause there's eggwhite in there. >>so it's realy frothy. >>yeah, a little milky. >>since i've been here in new orleans, there's so many gin an bourbon drinks, but they're so smooth and good. >>drinkin' a lot of gin, huh? >>lately, yeah, mainly gin and bourbon. >>i want to hang out with you. all kinds of big girl drinks. >>oh yeah, there it is, there it is. >>yeah, got milk. >>not a first date drink. >>(music) >>commander's on many levels has tried to lead new orleans with food and we have a lot of great competition that's doin' that. the leading edge of creole cuisine here in new orleans. and when we serve it at breakfast with a great eye opener, and you don't have a good time, there's something wrong with you. >>hey chef. >>good morning. how are you? >>good morning. i'm ready for some delicious brunch. >>fantastic. welcome to commander's palace. let's get you fixed up with an apron first. have you ever had rabbit before? >>i've never had rabbit. >>that's really sad. i did not think i was going to be making bunny rabbit today. i used to have a bunny as a pet. i love bunnies. >>today i'm going to teach you how to make rabbit saltimbocca which is rabbit stuffed with fresh brie cheese, duck pastrami and some house made taso ham. it's really good. as you can see, this is a rabbit that we just cleaned. it' almost looks like chicken or veal. a little bit of creole seasoning. want to try a piece of that? >>what is that. >>this is house made ham. we call it taso. it's kind of salty, it's got a little spice goin', smokey flavor. >>it's really good. >>really good, huh? >>this is brie cheese. we're going to stuff this with all these amazing flavors. >>so is this a typical southern brunch dish? >>yeah, order a bourbon, sit down, have brunch. it's awesome. >>bourbon and rabbit. >>i love it. >>(music) >>after we add some fresh basil and duck pastrami into the mix chef tori is ready to bread the beast. >>breading for us is an easy combination of flour, egg wash and seasoned bread crumbs. and if we do these right, this is going to turn beautiful, nice and golden brown. that brie cheese just melts on top of all the herbs, it's awesome. >>that sounds so good. >>it's great. >>(music) >>i feel sorry for the rabbit, but it smells so good i have to try it. poor little thing. >>next chef tori sautes some veggies in brandy for the meat to rest on. there's only one thing more to do before we plate. >>let's rescue our rabbit and go to the plate. >>ok >>rescue our rabbit. >>(laughter) >>that's good eatin' in new orleans. >>ok, i'm going to sit down and try it. so sorry little bunny rabbit. >>(music) >>so, this looks good. the rabbit was quite delicious. everything complimented each other. i love brie cheese and all the seasonings he put on there. it was so good. >>and in case you're wondering i bring my band everywhere. >>(music) >>we got stuck in the line. it's almost like a conga line. get the napkin spinning. dance to the music. it's so much fun. >>(music, applause) >>this is like a real new orleans experience coming here. so thank you . >>listen, you're a ball. don't be a stranger. >>cheers. >>we like to say "oogi wawa" means cheers in zulu. >>oogi wawa! >>oogi wawa! >>oogi wawa! i like that. >>(laughter) >>(music) >>from bourbon street to beignet's. new orleans has got it all. we'll see you next week. >>(music) heme music] i'm sarah gore, and this is open house nyc. this week, george and his team give an amazing surprise to a family in need of a home renovation. we check out a renovated brownstone on the upper west side. plus, designer james huniford takes us around his client's stylish greenwich village apartment. i wanted the entry hall to have an immediate statement when you walked in-- something tranquil something gallery-like and something calm. but first, we're at a home in bedford that's both stately and serene. alison benigan: and finally, the outside. i mean, talk about peace and tranquility. this is really it. welcome to open house nyc. today i'm coming to you from a three bedroom three bath penthouse in manhattan's west side neighborhood of clinton. this sleek home features light-filled, loft-like like entertainment spaces generous bedrooms, and a modern eat-in chef's kitchen and there's even a roof terrace. let's start things off with an enchanting home up in bedford that's a true feast for the eyes. it's filled with unique architectural details and decor that positively brim with color and shimmering light. this stately sanctuary is also surrounded by three beautiful acres giving it the perfect balance between stimulating and serene. alison benigan: hi. i'm alison benigan, and welcome to my wonderful abode. peace is an important part of this home. it's a foundation upon which this house was even built. so while the foundation of this house is peace and tranquility it also packs a powerful design punch. the moment you come into this house, you immediately know that you're some place special. this double-height sun-drenched foyer gives you a real feeling of grandeur. the first thing that you see is this customer wrought-iron staircase. it's the first of many ways this house brings the outdoors in. the white honed statuary floors make you feel like you're walking on a cloud. because of the high gloss lacquer everything sparkles just a little bit more. it's just another way that i've put my own twist on classical design elements. this living room is a combination of classical design, my love for spirituality punched up with a little bit of glam, which, come to think of it is how you could describe the whole house. this living room has double exposures, front, back sun-drenched, filled with light, high-gloss lacquer walls with a walnut french chevron floor. and double french doors lead to the back patio. this living space has a beautiful open flow, sort of like a loft in soho. and the adjoining family room has this wonderful cast stone fireplace that you can cuddle up near on cold winter nights. when you walk into this formal dining room you are transported into a world that is as glamorous as it is magical. it's a great room for family entertaining, formal gatherings, and just hanging out. and in the summertime, we open up these french doors for alfresco dining. but the one thing everybody loves is this antique crystal italian chandelier. and what it represents to me, this life's unexpected journeys, and that we always come back home. this is the master and i love it. after a long day, it's the perfect place for me to kick off my shoes and really relax. when i wake up in the morning, the beautiful view of the trees and the grounds feeds my soul. and the tray ceiling with intricate millwork adds a touch of glamour, which is what every bedroom needs. and finally, the outside-- i mean, talk about peace and tranquility. this is really it. three level acres with lush landscaping and specimen plantings. it is your own park-like sanctuary-- private, quiet, and serene. thank you for coming and taking a look at my piece of heaven. so what did you think of that bedford home? let us know on twitter with #openhousetv. stick around, because up next, we check out james huniford's elegant design in the village, and later, a townhouse on the upper west side. [theme music] alison benigan: have the best of all worlds with k. hovnanian homes. visit khov.vom today. when you don't get enough sleep... and your body aches... you're not yourself. tylenol® pm relieves pain and helps you fall fast asleep and stay asleep. we give you a better night. you're a better you all day. tylenol®. alison benigan: welcome back to open house nyc. now let's see how acclaimed interior designer, james huniford created a warm and chic apartment in greenwich village. with subtle backdrops and audacious accent pieces, he proves that design for everyday living doesn't ever need to sacrifice style. james huniford: hi i'm james huniford. i'm and interior designer here in new york city. today, we're going to take a look at an apartment that i designed in the west village. come on inside and let me show you around. i wanted the entry hall to have an immediate statement when you walked in-- something tranquil, something gallery-like, something calm. i painted the ceiling and the walls all the same color. it had a very dark floor that was very contrasting. the entry foyer, like all good foyers sets the tone for the entire apartment. i designed this apartment to feel both elegant and calm. the quiet colors of blues and grays interspersed with brighter tones. the apartment has huge windows with a view of the hudson river. i wanted to bring a sense of the water indoors. this rug i designed mimics the water that trickles out over the river. a lot of the floats, and it's a very untraditional floor plan for seating. i really wanted the seating area to be in the center of the room rather than the window. i like feeling centered in rooms. you want to experience the whole thing. in an open floor plan, it's very important that each area has its own function and feeling. i did that with the dining area by having a very sleek dining room table. as a contrast to the organic woods, i wanted to have something that was very polished. so i placed this console to the right of the table. above it is one of my favorite pieces-- this round 1970s mirror. what gives a room character is to find unique pieces. i love the idea that it was made by craftsmen, and it's a one of a kind and it's very unique. studies are a multi-purpose room. this is my updated interpretation of a study. i wanted a clean, calm backdrop that was crisp and light. the study had a conventional doorway that i replaced with a deluxe barn door. this opened up the room and helped the space flow with the rest of the entertaining spaces. and, if you want peace and quiet, you can always close the doors. color tones in this room are blue and gray similar to the living room but acquired a sensibility given the indirect light. now for another color palette, let's go look at the master bedroom. this client wanted to have something that was very calm, very elegant. she had a specific color palette that she loved-- silvery grays. she wanted very understated and subtle. she didn't want it girly and she didn't want anything to jump out at you in the room. we covered everything, even the dressing table, in this organic bark paper to create an [inaudible] sensibility. i designed this silvery celadon silk carpet to be extra soft under your feet. it's a great way to get out of bed in the morning. thank you for visiting this west village apartment. and just remember, a great interior should always reflect the personality of the owner. stick around. up next, brownstone living on the upper west side. [theme music] speaker 1: coldwell banker real estate-- fulfilling dreams for over 108 years. you're watching open house nyc. now we join interior designer, vanessa deleon at her client's home in franklin lakes, new jersey. vanessa shows us how she mixed classic architecture with eye-popping decor to create spaces that are as playful as they are glamorous. take a look. vanessa deleon: hi. i'm interior designer and lifestyle expert, vanessa deleon. and welcome to this home in franklin lakes, new jersey that i designed. this is my personal favorites, and i cannot wait to show you around. my goal for this home was for it to feel timeless, and, of course, for the home to feel glamalistic which is a fusion of minimal and glamour detail. the first thing you notice about this beautiful dutch colonial is its open floor plan. i really wanted to achieve different themes throughout the rooms, but still keep the continuity through the spaces. so what i did was create this center focal point with this beautiful crystal chandelier and this beautiful sofa with black velvet and black details it's just a gorgeous centerpiece to flank the living room and dining room. here in the former living room i wanted to create a space that is sexy, playful, and fun i injected a pop of color into each room and in this room i used turqouise and fusia. now i love lucite and i wanted to include lucite pieces in here. like these lucite benches you can sit on and the end table is a functional service. in an open floor plan it's imortant to link the rooms and how i did that was by using the same wallpaper on the ceiling as i did in the living room. these cultural hands on the center of the table are a playful take on candle holders. the centerpiece for any dining room is obviously the dining room table. it has knots and holes and all the flaws that come with a natural wood piece. now this is my untraditional take on a traditional library that also serves as my client's office. so the centerpiece of this room is this desk with lucite legs, white lacquer finished top, and raw wood for a touch of the organic. the design aesthetic for this entire home is really captured in the master suite. from the lacquered case goods to the reclaimed mantle and furniture, oversized pillows of fur, crushed velvet-- we really wanted to bring all the mix of metals into the room, and also the mercury glass. i created two distinct sitting areas around the bed. one right in front of the fireplace and television, and the other in a cozy bay window. i used a moroccan theme to keep things eclectic, which contrasts nicely with the more modern furniture on the other side of the room. no master suite is complete without a luxurious master bathroom with a water jet backsplash tile that incorporates marble and glass. how glamorous is that? and the closet is something right out of hollywood, which, to me, is the most important room of the house. as a designer, you dream of having a client that gives you creative freedom and we really had that here. i hope i inspired you to be more eclectic in your design selections. coming up after the break, a renovation reveal you don't want to miss. we'll be right back. (buzz!) if you want to save fifteen percent or more on car insurance you switch to geico. it's what you do. bring us your aching and sleep deprived. bring us those who want to feel well rested. aleve pm. the only one to combine a sleep aid... plus the 12 hour pain relieving strength of aleve. be a morning person again, with aleve pm. now, this week, friend of the show, george oliphant from george to the rescue creates a new space for a recent widow and her two teenage daughters looking to move forward. michelle: chris and i met when i was about 16 years old. i was working at a pizzeria, and he was the delivery guy. and that's where we met. chris was always very active. he played a lot of sports, was always in great shape, funny, very involved with the kids-- was always there. you know, like a family guy-- just always around us. we moved in here-- everything was like, original-- like 1969. you know, very old-fashioned. so room by room, he renovated it himself you know, just to save money. and he was able to do it. the space downstairs was the last room, pretty much in the house that wasn't renovated. we thought about it last year and then that's when he started getting sick. last year, he didn't feel well, and i kind of pushed him to go to the emergency room. they found that he was born with this defective valve, and he ended up having to have a permanent pacemaker. and he was given a good outcome. i woke up, and he was making these strange noises. i thought maybe he was having a seizure then i realized maybe he wasn't breathing. so i called 911, and that's when the paramedics came in. and then they said he had-- you know, there was no chance to bring him back. so that was-- that was that friday, august 22nd. hey, michelle, girls. how are ya? actually, one of your neighbors wrote in and told me about your father and your husband's passing so i'm so sorry about that. but i understand you guys have some unfinished work here in the house. and i'm here to tackle it. i'm bringing in my team, take care of it, make it better than it ever was before. so it's a little cold out here. mind if i come in? seems so warm and toasty in here. george oliphant: guys, welcome to what is supposed to be the dephilip's girls' family room. and this was actually the last project their father was working on. he wanted to turn it into, like, a great space for them where they could study hang out, watch tv. and now, it's really just kind of a storage area. peter wong: this is a great opportunity for us to do something nice for the family. i immediately see some water damage over there. not sure what it is right now. definitely, someone need to investigate. exactly. we gotta open this up and check it out. i'd say we have our work cut out for us. what do you say we get this job started? -ready. -let's do it. george oliphant: any time you're doing a construction job, you're going to kick up a lot of dust. made me think, i probably should switch out the filter. just look at that. and really, you should probably switch these out, even if you're not doing a construction job, every three months. the way i remember itt-- just switch it out the beginning of each season, and you're good to go. that's how easy it is. this is for you. thanks. you got that? [music playing] welcome to "open house nyc." today, we're taking you outside the city to escape the winter doldrums. we're bringing sunshine, sand, and sparkling blue water from two countries, st. maarten and st. martin which share a 37 square mile island in the caribbean. let's get started with interior designer vanessa deleon. she wanted to create a winter retreat for her client. her goal was to make his home look modern, timeless and glamorous all at the same time. and as you'll see, it's all that and so much more. -hi. i'm interior designer vanessa deleon. and welcome to a place that i can only describe as paradise. welcome to st. martin. as soon as you enter you can understand why stepping into this home is truly like stepping into a fantasy. and i design everything with that in mind. the name of this villa is c'est la vie, which, of course means "that's life." and the lifestyle i wanted to create through my design is one of central luxury and plush comfort. c'est la vie is modern chic, and, above all, serene. and how could it not be with ocean views like this from every room in the house. this great room is the heart of the home. it comprises three separate zones, living, dining, and kitchen, all linked together by this off-white oversized, porcelain tile. another thing that links the zones is the use of this brown marble. it's used as a backsplash in the kitchen, the island, dining room table, and the wall unit. and that makes the space feel cohesive and tailored. my clients entertain a ton, so it was very important for the seating to accommodate large parties. but i wanted everything to be open and free-flowing, not just between the individual areas, but between the inside and the out. this wall of glass actually disappears, which gives a whole new meaning to bringing the outdoors in. another prevalent detail is this glass staircase that floats above this indoor and outdoor pond. and the chandeliers take a different perspective as you ascend the staircase to the bridge. this bridge is glamorous sexy, and makes you feel like you're walking on a runway. and the perspective of your guests partying down below is priceless. it's flanked on either end by two luxurious junior suites. but let me show you the main bedrooms. the way this home is designed is that the master suites wrap around the outdoor patio. and yes, i said suites. each of the master suites have a different theme and vibe. and each room has a unique accent wall. the theme of this room is the ocean, and the accent wall mimics fish scale. this room is a jungle room, and the accent wall here is banana leaves. but the most unique feature is the hanging bed. and this teak tile accent wall in the more masculine master suite is so very beachy. speaking of, let me show you what i did outside. in st. martin, it's all about the outdoors. and really, when the outdoors look like this, you could be forgiven for just setting up a deck chair and leaving it at that. but i wanted this to be a true oasis in every sense of the word. but the biggest challenge when designing a home on the water is competing with this. everything we chose was about complementing this view with minimal, clean, luxurious details and furnishings. much like the great room, we created separate zones of comfort and luxury. we have the dining room, bar, pergola, and loungers all surrounding this beautiful asymmetrical, free-form pool. even while designing outside the devil is in the detail. i chose white furniture overall because i really wanted the blue iridescent tile in the pool to pop. the entrance in the pool happens to be a custom-made tile with a beach theme. it mimics the ocean sand and creates the illusion that you're stepping into an ocean, but really, you're just stepping into the pool. and i love the way the hammocks cantilever over the pool giving the sense that you're floating above water, which you have to admit isn't a bad way to take a nap. i hope you enjoyed taking a look at what we did to this beautiful st. martin villa, both inside and out. in design, sometimes less is more. but it's always about creating fantasy. and this, without a doubt, is a dream come true. now, it's time to swim. -that pool area was absolutely stunning. let us know what part of vanessa's design stood out to you on twitter, with #openhousetv. we're sticking around on the french side of st. martin and heading to a cliffside retreat. martin, the french side of the island. this beachfront property is situated on nearly four acres and boasts 15,000 square feet of living space. you'll find ocean views from just about every room. with france, another special touch at casa de la playa. and from the darkness of the wine cellar to the sunshine of the terrace, this is what living at casa de la playa is really all about. not only you have 400 feet of beachfront but you also have a free-form, infinity edge, saltwater pool. this is the place. i can't think of a better place to be than out here to watch the beautiful caribbean broke i don't have anywhere to go. she said if you are serious i'll help you. i won't let your feet hit the ground. long story short the she, she stayed by my side i said will you marry me. she was like i don't know you like that. she is like the goldie. she blocks everything from coming in. >>reporter: it took time and hard work but charlie made it back to the top. in 2013 justin timberlake
