today, monday july 13 2015. >> announcer: from nbc news this is "today" with matt lauer and savannah guthrie. live from studio 1a in rockefeller plaza. >> willie is in for matt who is taking time off. i taught the upstate new york escape was impressive. el cap had a mile long tunnel with a rail car, ventilation. >> one of the most notorious drug pin this is the world. he had help when you look at the tunnel. >> you wonder if they will find him again. we have breaking news. marathon talks leading now to a new bailout deal with near bankrupt greece overnight. let's get to keir simmons covering the story in athens. keir good morning. >> reporter: good morning. european leaderers pulled a 17-hour all-nighter to reach the deal. that's how serious it was for europe. the greek prime minister has $100 billion of extra money but with tough reforms some call a sur rend erer. one fruit importer said he may not be able to import apples and lemons. this country is the same size as ohio. imagine ohio forced out of using the dollar the way greece faces being forced out of the euro. gives you an idea why people were biting their fingerer fails through the night. >> the stakes are high for the world. keir simmons in athens, thank you very much. >> thousand to thenow to the story of the manhattaner manhunt for el chapo who used a tunnel to escape from prison. mark potter has the latest. good morning. >> reporter: good morning. behind me is that prison where chapo guzman escaped through a mile long tunnel headed in that direction. this is a major slap in the face of the mexican government which promised to keep chapo behind bars. this morning we are getting a first look at mexican officials touring the tunnel exit joaquin guzman known as el chapo or shorty used to slip out of his maximum security cell. it's his second escape. last time he eluded police for 13 years before being recaptured a year and a half ago. mexican police are searching for the drug lord. >> this is like cap cure ing osama bin laden having him spend a year in prison and then walking away only to reengage in terrorist activities. >> reporter: the escape probably took months of meticulous planning. dozens of prison officials are being questioned. guzman was last seen on security camera saturday night entering a shower area. there, out of camera range he slipped into a 20 by 20-inch hole down a ladder into an elaborate tunnel made of wood and pvc pipe with a small motorized rail car which stretcheded for a mile under the prison from a half built house in a farm field. >> the cost of building this tunnel probably was between $3 million to $5 million. that was simple nickel and dime change to chapo guzman. >> reporter: the mexican president, traveling in france said he was profoundly troubled by the escape which isser considered a major embarrassment for his government. >> hard to imagine this happening without government officials being involved. the question mark is how high up does it go. >> reporter: that will be a question for investigators trying to determine who else was involved in this escape. meanwhile, u.s. drug agents are furious that the chapo guzman who is wanted in several united states cities is once again free. savannah savannah? >> nbc news analyst general barry mccaffery good to see you. good morning. >> good morning. >> this was a huge prizer for the mexican government to capture el chapo and they were confident to bring him to justice and keep him in prison. it is a huge embarrassment. are you surprised this happened? >> well somewhat. it's an astonishing lapse of judgment on the part of mexican authorities and law enforcement. the judicial subpoena system is corrupt. some say the cartel pays a hundred million a year in bribes. thatter cartel probably earns half the money. so again it's a terrible comment with the with exception of the mexican marines and the army the president cannot rely on his law enforcement system. >> uh you mentioned the bribes. one assumes he had help to build the tunnel. probably help within the tunnel as well. you have to ask yourself is it loyalty or fear that people who are still working for him while he's in prison go to such lengths to bust him out. >> of course he's a businessman. he has a 3rd grade education, can barely read and write but takes drugs to europe asia, south america and the united states. some of it is coercion and threat of murder. he may have been involved in the death of as many as 100,000 people. this cartel counting subcontractors may have 150,000 employees. this is a gigantic operation. and the bribe money is beyond belief. during this current administration there's been a huge drop in cooperation out of the mexican government. both in extraditions and cooperation with the d.e.a. >> one official saying oh, maybe we'll extradite him in a few hundred years. last time he escaped from prison he wasn't found for 13-plus years. do you think they will find him again? prince william may experience it today as he takes on a new role as an air ambulance pilot. joe? >> reporter: you might think prince william had enough with his royal duties and two kids by today starts a civilian job that involves nine and a half hour shifts and a high level of skill. william was born into the role of prince. when it comes to his job as air ambulance pilot this is day one. >> very very happy to be here. first day. nerves. >> reporter: it's not an image you see every day, a prince pauling a helicopter around a rainy airport runway. he's getting his hands dirty after months of changing diaperers. as of late he's been spending time with family including his two children. prince george who is almost 2 and princess charlotte who was christened a week ago. >> etit's been fantastic. she's a joy having. it's more responsibility look after two little ones. especially when george is around. he's a little monkey. >> reporter: it's hard leaving behind the kids to go to work but the prince says -- >> no more difficult than anyone else has to do. >> reporter: he's a former search and rescue pilot with the royal air force. for the new job he'll fly doctors and paramedics to car crashes and transport patients to the hospital. >> i'm hugely excited to join a professional bunch of guys and girls doing a unique complex job. >> reporter: for now he'll divide his time work royal duties and family which begs the question -- any chance of a third royal baby? give give me two minutes and i will show you how to save a life. right now a child is drowning in this pool. can you spot him? i will give you a second. can't find him? don't feel bad. i couldn't either. let me zoom in. there he is. just went off the tube. it happens that fast. even in a packed pool like thisment luckily a life guard spots hip and saves his life. so this summer with kids and adults jumping in all of us need to be ready. >> it can be completely silent and quick. >> reporter: jeff thompson is a certified life guard. i thought anybody drowning would be flailing screaming help i can't swim. >> unfortunately they can't breathe so they can't call for help. >> reporter: what does it look like when somebody is drowning. >> the feet look like they are climbing upstairs arms going up and down and the action is under water. there is no splashing on the surface. it looks similar to this. >> reporter: it looks like you are relaxing on your back but you are rert call in the water. >> that's correct. >> reporter: what do you do if you notice someone drowning? we'll show you. i will play the victim here. >> first scream for somebody to call 911. never jump in the pool. they can pull you under. use a pool skimmer or your arm. the pool skimmer should be on the pool deck. >> reporter: critical tip. keep the pool skimmer handy. >> grab them by the wrists and you will pull them out of the water. roll them and if necessary start cpr. >> reporter: in the movies people go for mouth to mouth. >> we don't want to do that. focus on chest compressions to keep the brain alive. sfrks what do you do? >> rib cage, two fingerers above the notch at the bottom. one heel he on lace the fingerers. a hundred compressions a minute like trying to squeeze the water out of a nerf ball. >> reporter: the this looks like it could hurt . >> it will keep them alive. >> reporter: seconds matter especially in a drowning. it all comes down to how long your brain was without oxygen. identifying the victim and getting them out the right way could be the difference between a normal life brain damage or death. >> near drownings can be as devastating. i would think you would want to flip them over make sure -- it's hard -- >> when you get them out of the pool flip them over. see if they are breathing. if not, start cpr. >> if it is a kid, go get them. >> if it is a kid you can get them. there have been cases where adultpull you under. tomorrow we continue the series talking about choking. it can happen at a restaurant a home anywhere to children and adults alike. we have seen movies with the heimlich maneuver but how do you do it and what if your baby is choking on a hot dog? >> remember me? good morning, everyone. in the news a mexico prison officials are being questioned about the escape of joaquin "el chapo" guzman. he was last seen on prison security video saturday night entering a shower area. from there he escaped through a hole that led to a mile-long tunnel. the escape his second is a huge embarrassment for the mexican government which boasted after his recapture last year that guzman would never get out. small villages in mexico have been evacuated because of a threat from the so-called volcano of fire which roared back to life. miguel al pama gur has the latest. >> reporter: good morning. we can smell smoke, soot and ash in the air. we are at the base of the volcano which is known as the volcano of fire. it began spewing lava on thursday. a mile and a half into the air. there's been so much volcanic activity in the area there is a seven and a half mile radius from the volcano. 700 people have been forced to leave their homes. the number could rise. so much soot is if aing in local neighborhoods. up to two inches thick, blanketing neighborhoods. officials are worried about health concerns over the next several days. the volcano is showing increased activity. they are saying it could be the biggest eruption they have seen this the last century. the danger levels here are certainly high. they are asking for more folks to move further away from the very active and incredibly busy volcano. natalie? >> home made marinara cook down garlic and onions crushed tomatoes and fresh oregano. >> add a lot of flavor without adding a ton of fat there pt we want to cook this down into this amazing sauce so the flavors are concentrated into this. >> not that i would do it but if you were in a pinch for time could you buy the jar? >> absolutely. totally cool. what we do to add nutrient boosts is add in spinach. >> do you do it after it's cooked? >> absolutely. do a two-hour simmerer. add in spinach and kale and balsamic vinegar to finish. acidity and sweetness. it tastes amazing. >> simmer two hours, add it and you're done or more simmering? >> finish it off like this and it's done. >> great are. >> mushrooms are key here. you will give us a technique. slicing mushrooms have are tricky. >> you don't feed to take the stem off button and cremini mushrooms. have the stem facing you and just slice like soment you can get really nice thin slices on those. with shitaki, you want to remove that woody stem. it's absolutely delicious. no feed to waste. it's about root to leaf cooking now. >> you are have a mix of mushrooms. >> absolutely. you could do oyster button mushrooms, cremini, cooked down with greens. >> the gang are down here eating. you're so quiet, i i'm suspicious. >> we are eating. we haven't said two words. >> ahazing. so good. >> i know they like it because they're not gabbing. what's next? >> work on your filling. we have onions with olive oil and push rooms. you will add in spinach or kale. you will flavor your ricotta. >> you useder part skim. again cutting back on the fat and calories. >> we're not skimping on anything. it's 2%. you will still get a hit of flavorment. >> guys does it taste cheesy enough? >> perfect. >> the cheese on top gives it a pop. >> i love that. we are basically flavoring our cheese mixture, adding in gorgeouser car caramelized mushrooms, onions and greens. >> this is the fun part. you use the no boil noodles. >> we're busy. we have to save time. no boil is the way to go. you can definitely -- >> and gents. >> i'm sorry, al. add the sauce to the bottom. it's simple. sauce on the bottom. then the second layer, do the no boil foodles. just go ahead and grab three. they go straight in. >> yep >> then the ricotta mixture, right on top of this. each layer -- >> just spread it around?
