Nbc. Were back now at 8 48. All week on today food, were lightening up your faf ritvorite dishes. Hardy food made thin by katie lee. Shes the cohost of Food Networks<\/a> the kitchen. We have an issue. You were going to make chicken parm. Mmhmm. My thought is, you eat light on the days surrounding chicken parm, but you make real chicken parm. Sometimes, you have to get your fix. If its a week night and you and still, you know, have an easy meal, this is for you. There arent many ingredients. Lets look at our food board over here. Youre going to make this lighter in a couple of different ways. Yeah. By not breading and frying the chicken, its going to cut down on the fat. Isnt it all about the melted cheese anyway . No, its all about the fried bread crumb taste and flavor. That gets soggy in the sauce anyway. How do we start . We have an easy sauce going. I started with grated onions and some garlic and olive oil. Bring that up to temperature together. Dont put it in a hot pan because itll bornurn quickly. Ill add crushed red pepper and not yet. Sorry. Tomatoes. This is a quick sauce, so use really good quality toe naymatoes and these are the best. Put some salt and pepper in there. Sure. Simmer for 20 minutes then add the fresh basil. Should we pretend . Go ahead and put it . Now the chicken. I put it between two sheets of plastic wrap and pound it. You like it thin, right . Yeah, it spreads it out to cook evenly. It tenderizes the chicken and makes me feel like im eating more if its big. Kind of fools me. To season it, i use salt, Garlic Powder<\/a> and pepper. Again, this is the big change. At this part of the recipe, normally, wed get the bread crumbs on here. Normally, wed be putting it in flour, eggs and bread crumbs. That adds a lot of calories to it. This way, were cutting it down. Ive got it in some olive oil here. Brown it on each side. Just a couple minutes. Its going to finish cooking in the oven. You dont have to cook it completely right now. You see how fast this is to put together, too. Its a quick recipe. The sauce goes right on top. Skill letet so it can go in your oven to finish cooking. Ladle on the sauce. You can serve with extra sauce. Heres where you lighten it up again. Im using part skim mozzarella. Youre breaking my heart but its okay. Youll love it. I promise. Youre never going to even know its lighter. This is poured on top. How long do you put it in the oven . With harmparmesan cheese. About five minutes. If youll grab the oven door .
