Well i already took the opportunity to kind of preheat everything and i will show you how you know theyre made. These are fresh scallops. What we going to do is just put a little pepper and lemon zest to kind of season them. And the reason why i start ahead of time is these have time to smoke a little bit. Therefore already started the first batch. Once these are done we can put them inside the pan. And sear them. Once those are done, then very easily we can spread the puree. A little bit on the plate. And we can these are done already so we can prepare these.
