I add bacon. Its a vegetable frittata that has bacon in it. All of the stuff coming out of your garden or Farmers Market now, basil, rosemary, chives, take four slices of bacon. I have to be honest, my daughter, courtney, who food styled this, i said i would really use about a pound but thats just me. Youre going to saute this. Youre going to render the fat out until it gets fairly crispy but not too crispy and then youre going to take that out and youll take all of the bacon out and just leave the bacon fat in there. Do you like cooking your bacon in cast iron or put in the oven . I do it in the oven but i do it here because you have the fat. Take sliced up onions, pepper, rosemary, oregano and saute this until its translucent. Not brown but on the translucent side. Youll cook that down and saute it until it cooks up nice. Back up the bacon truck. Well pour beat them. I like to add a touch of whole milk in there as well. What does that do . It puffs it up just a little bit. Youll let this set for just a tad and then once it sets a little bit, youre going to add your cheddar cheese. Okay. And youre going to add your chives. Your basil. Just going to let that set in there. Once it starts to set on that heat, youre going to take your cherry tomatoes and sprinkle and then youre going to add your lovely heirloom tomatoes. Imagine bacon going in there. We got a little left. Never okay not to have bacon. Put it in there. Youre going to put it in your oven at about 350 for around 15 to 20 minutes until it just starts to puff up. Once it does you might in fact if you like, if you want to get more if you love cheese as i do, you can take some extra cheese, sprinkle it on top and then put it under the broiler for just about two minutes and it browns up nice and you have this.
