Thats like every day for me. Joining us now is a man who nopes how to make a darn good pizza, and the red hen, thank you, chef, mikey. Always a pleasure to be here. How would you describe your pizza besides delicious. I would describe it as a variety pizza. Im so excited its National Pizza day but it is my favorite thing. I can never get old of it or tired of it i can eat it every day. Breakfast and lunch and dinner. My wife doesnt let me do that. Shes a good woman. Yes, she is, our pizza would be described as style, oven pie. We call it a pie and slice of pie and its got a breadier texture to it and caramelized more than those that are cooked quickly. It has a little more ingreend yents and were going to make it right now. Show me how to make it. Our dough our dough actually goes through a threeday cold fermentation process. That means that means its a health food. It actually to a certain extent its true, its more digestible and utilize whole wheat flour which adds great depth and texture. What weve got here, a little bit of water and yeast and thats going to bloom. Its just melting into the water. So from there what were going to do is add our flour. Weve got whole wheat flour from california. The only whole wheat i like there you go. It doesnt work whole wheat flour gets a bad rap because it sometimes make it. Weve added whole wheat from california and add malt powder to yeast development and caramelization. Its easy and cheaper than buying stuff at the store. It adds a sweetness as well. You can substitute honey or even sugar. And its very indicative of new york style dough to add some kind of sweetener as well as salt and olive oil from california. I call this an all american dough. From there were also going to add a starter. So a starter is something that we make a couple of days before. And it builds up flavor. Its like a sour dough. We add a sour dough and take out a little bit from our mother and then fold more back in. Our mother we always have to feed our mother like i always feed my mother when she comes to the restaurant. I should be fed all the time. Amen. So were just going to mix that and this actually will mix for 25 to 30 minutes and it develops gluten. You hear a lot about that gluten allergies and this and that. This is a protein found within the flour. Adds gluten mixes with water and yeast, it creates elasticity and makes you make you the dough. We have our dough and this is how we roll at the restaurant. Were going to stretch it and were going to stretch it and see how elastic that is and throw it a little bit, have fun with it. From there, were going to add it to our peel and ill have you make your own pizza. Can you tell me about your sauce. Its really unique,ts tomatoes from california, chris bianoc started the company and made in the i am an of san marzano in cicely southern rome. Awesome organic we add a little oregano and it cooks on the pie. Mozzarella from connecticut. Low moisture. We want gooey stretchy cheese. We dont want kind of like runny watery cheese. I dont have time to add my pepperoni but this is the ill take a bite. This has got mozzarella and pepperoni from new york, absolutely dishs delicious. This is one of my favorites, cheers to National Pizza day. Love having you. Always a pleasure. Salivating. We are. After the break, an alarming trend in colon cancer cases.
