Always you see these prune plums this time of year because they use this to make good apple cake and stuff for the sweetness and good fortune. You can use these plums to make a tart like betty made today. So these empress plums you see in the stores this time of the fall. In fact, today, my son text me from florida and said he knew what i was doing and said dad, i remember, when i see an empress or prune plum i think of the fall. We see more and more of them coming in earlier. This year youll see them because the new year is earlier and people use them for cooking and stuff. When you buy these, jake looked at them when i had them home and he said whats on the outside of these . He said can i wash them off . I said this is what we always consider a dusty bloom. That means freshness in it. With these plums, especially, you have to let them set on the counter for about a day or two once you bring them in and let them get soft. Thats what you want to do. These are soft. The skin itself is a little bitter. When the plum starts to ripen, what happens is it goes from a green inside to actually this color, look at this color here. See how this starts to get this golden color on th i e inside and all. Thats actually the sugar. Also, when you cook these, the heat brings the sugar out in them which is really, really good. Theyre good for cooking. I like to eat them out of hand. Theyre very, very sweet and not as dry as the prune plums. A lady came up to me and said she made a cake and it was sour and i said try these empress plums. Although theyre a little bigger, they still are what we call free stone. In other words, the stone here will come out once you cook them like this. Of course, it takes me time. Thats what happens. What we call free style. You can use these bigger. Betty did today. When you see them in the stores, theyre going to have this, theyre not going to be shiny. Theyre going to have a bloom on them. Dont be afraid to bring them home. Youll probably see them in the stores with this color. Not as deep, a deeper purple. Just leave them. They have maturity in them so leave them on the counter. Theyre going to start like this and get deeper. Leave them on the counter. Once theyre soft you can refrigerate them. You dont want to refrigerate them for a long time. Refrigeration sucks the juice out of them. What you want to do is use them as soon as possible.
