I have a nice sauce with crab and a little horseradish and asparagus tips in it and here i have three to four ounce salmon plates. I got the pan hot. Put a couple tablespoons of olive oil in it and put them in. How do you season them . A little bit of salt and black pepper. Thats all you need on salmon for Something Like this. Maybe a minute to two minutes on you dont want to overcook it. It is a thinner slice so it doesnt take that long but the key is you want to keep it moist. You want to keep it good tasting, once we turn it over i will add about two tablespoons of butter to the pan. Let it melt and then use a spoon to baste. The liquid the butter and the oil . With the butter and the oil. And once we put it on the plate you top it off with the warm sauce. You wouldnt believe how good this is. But the key is you have to start with good product first. You have to start with good salmon. A salmon fillet, no bones. And good olive oil, too. Yes, good olive oil, too. If you have really good olive oil, its so delicious. You need to use some safflour oil or something, dont use margarine instead of butter. Id rather you leave the butter out and not use it at all. The sauce is what makes it oscar. The sauce is basically traditionally it is a little bit crab meat and asparagus, blanched asparagus on the top. To make the sauce. I make mine into the sauce. Other chefs will put on a bearnaise or hollandaise sauce. It is easier to make if you make the sauce out of the whole thing. There you go. We will be back to taste this a little bit later.
