At the yellow station, chef vikki krinsky; and at the green station, chef richard rosendale. Chefs, are you ready to see the recipe thats going to haunt your dreams . Vikki yeah, im ready. Richard lets see what weve got to work with. Evette here we go. Richard ooh. Vikki wow. Richard okay. Vikki this looks like a bowl of sugar. Evette okay, are you guys ready to taste this banana pudding . Richard i mean, honestly, it is like coating my mouth with sugar. Vikki its so processed. I dont even think theres real banana in here. Oh, look at that. I found him. Hes dead, for sure. Evette with 630 calories per serving, and with a whopping half a cup of sugar, this banana pudding is not exactly a dreamy dessert for a diabetic. Are you guys ready for action . Vikki im ready. Richard totally. Evette lets put 45 minutes on the clock. Lets rehab that recipe our chefs will be judged in three categories. The newton family will just the dishes on taste and ease of preparation, and the Everyday Health nutritionists will give each recipe a score for health. Chef richard, whats your plan of attack . Richard im going to kind of veer off a little bit from what they were doing, which was making a pudding. So, what im going to do is make a trifle, which is going to be layers of bananas. Im going to put some blueberries in, very nutritious. Evette trifle is kind of like a parfait then . Richard similar to a parfait. Instead of using that really heavy egg and flour and sugar mixture, im going to use yogurt, and im going to flavor that with a little bit of honey, which is a natural sugar. By doing all that, im going to cut the calories by 50 and the sugar by 70 . Evette im impressed, im impressed. Okay, vikki, what is your plan of attack . Vikki im going to cut the sugar. Thats my plan of attack. Im going to make a banana custard and caramelizing the banana, because thats essentially going to be my sugar. Thats going to form the sweetness in my dish. Instead of using the vanilla wafers, im going to make a crust, and im actually going to be using Graham Crackers, and toasted almonds, and a little bit of hemp seeds. Im cutting the calories by 50 , and im also cutting the sugars by 75 . Evette wow, thats a big deal. Okay, what are you doing over here . Richard okay, so for the first step is for one of the layers of my trifle, im actually going to do a little bit of like a blueberry sauce. So, ive got some blueberries and, of course, a little bit of corn starch to help thicken it. Mix those ingredients, turn the heat on just low, and thats going to be enough to kind of create its own little sauce. You know, instead of doing sauces that are just ladened with sugar, you know, use natural sugars, and plus they have more flavor. Evette heres to the blueberry vikki, what are you working on now . Vikki well, right now, im creating my crust. So, i have my hemp seeds, my toasted almond. Evette wait, wait, tell me about the hemp seeds, because ive never seen those in a recipe. Vikki youve never used them . Evette yeah. Vikki well, i like to use hemp seeds wherever can. Eyre really high into ega threes. Eds wherever can. Ette okay. Vikki so, its bringing down the cholesterol, its increasing the nutritional value, and itll just make this ally great sort of texture in this crust. You can sprinkle it on yogurt, in smoothies. Evette wow, those are tasty. Vikki yeah, you can do a lot with them, and theyre really, really good for you. Evette theyre delicious, wow. Vikki thank you. Evette who knew . Hemp seeds. Okay, those are awesome. Vikki so, in here, i have one tablespoon ofmy ve. Im putting eight Graham Crackers in here, and im just going to pulse this. Evette okay, great. Okay, what are you doing over here . Richard coming over here to the crust. You know, as a nod to the original recipe, you know, i know they had the vanilla wafers in there. Evette yes. Richard so, im going to put a few in there, since the family likes that. Im going to crush that up, but i cut it way back. I dont have anywhere near the amount that they put in, and im also using the reduced fat. W, in order to still ve enough substance, im going to add a little bit of the vanilla almond granola. So, well mix this, and this will be the kind of crunchy layer of the trifle. Evette i love that. We are about at the halfway mark, only 20 minutes to go. This has a third cup of honey and a cup of unsweetened almond milk. Evette okay. Vikki and im just going to heat this. And to that, im going to add my banana mixture, and thats going to be the banana custard. Evette those smell so good. Vikki yeah. Evette okay, i dig it. Im excited. Hows it going over here . Richard well, im going to make our cream and yogurt topping. Evette okay, ive got to ask you a question. Richard mmhm. Evette i personally love yogurt, but yogurt definitely has that distinct kind of tang. Do you think theyll be into it . Richard looking at the original recipe, what im going to do is im also going to cut that with some light whipped cream. Evette oh, clever. Richard and talk about super simple . Were adding some of this cream to this, but then we also have all the benefits of yogurt. I eliminated all of the eggs, so were cutting back on the cholesterol. This is just so much healthier in so many different ways. Evette okay, so what are you doing over here . Vikki so, im just mixing up my eggs and my cornstarch, and this is going to go into our milk mixture. And this is a really important step, because whenever youre putting eggs with heat, you dont want them to curdle, so you want to temper it, and you want to slowly add a little bit of the heat just like that. Evette ah, i see. So, youre just raising up the temperature of the eggs vikki exactly. Evette to the temperature of the milk. Vikki exactly, really slowly, because they can curdle really easily. Evette and this isnt raw eggs, because youre cooking it with the heat from the milk. Vikki exactly, exactly. Evette okay, got it. Vikki and this is all going to actually go back into the pot right here, and im going to mix the banana mixture in here, and thats going to be the fullon custard. Evette this seems slightly complex. Put the eggs in this, make sure this is cold, put this in here. Vikki i dont think thats complex. Evette put it back on the stove. Vikki there are a couple of differentsteps. Evette yes. Vikki but you know what . When you taste this, its well worth it. I think by doing all of this, its really going bring the familyis, mbers together. It. Evette okay, so you think the newtons can hack it, huh . Vikki the newtons got this. Evette oh, look, hes already assembling. Vikki hes crumbling his crust. Evette he sure is. Vikki yeah. Evette wow, he seems way ahead of you, doesnt he . Vikki i dont know that he does. Evette he seems pretty confident. Vikki hes a master chef. I dont know if you know that. [richard chuckling] evette i know, i know. Vikki so, competition is high richard what weve got right now is our bananas that weve sliced and fresh blueberries. Next, were going to come in with our topping, and were going to put a little bit of that over there. Evette so, you just smooth it out, make a nice little layer. Richard yeah, but now im going to do another layer with some more bananas. Im going to put some raspberries in there. Evette well, this is fun. Richard it is fun wearing raspberries. Evette thats one of the features of raspberries is that you can do that. Richard right. Evette i will say, though, you are going out on a limb by not only choosing yogurt, which has that natural tartness, choosing fruit thats not entirely sweet, sweet, sweet. Its going to have a little bit of tartness, too. Do you think the family is going to go for that . Richard well, i think the whole point of it is trying to introduce as much natural sugar, instead of adding all the refined sugar. Its going to taste great. Evette okay, hes feeling confident. Okay, so what are you doing . Vikki im just going to make a slight crust; and, again, were going to layer it, but im just going to go grab my custard mixture. Evette okay, cool. Larry oh, yes, lets go do this. Aliyah we need to peel and slice two bananas and put them in a microwave bowl. Larry okay, got it. Aliyah i hope that counter is clean. Larry it is clean. Aliyah we need to microwave the bananas for two minutes, and then well be left with brown, soft, gooey bananas. Larry okay, fine, lets go. Oh, yeah, high five. Yeah, okay. Jeavonte okay, ma, were going to start out making the blueberry sauce. So, were going to place all the ingredients inside of a pot on low heat. Tonya the green recipe is starting off with raspberries and blueberries, so im not quite sure how my family is going to like that, because theyve never eaten it. These are your reduced fat vanilla wafers. Jeavonte all right, with the look on my face, this tells me i cant wait to try them, doesnt it . Tonya yeah.
