my books, magazine, and tips all celebrate simple and affordable ideas... - you may just be the greatest travel tipster of all time. - ideas that are naturally beautiful, naturally delicious... refreshing. summer in a glass. and naturally sensational. i love this. - i'm so glad. - this is "naturally, danny seo." hi and welcome to "naturally, danny seo." now, i don't know about you, but i never turn down a sweet treat. and topping my list, thick and creamy home made frozen custard. to see it made from scratch, i decided to reach out to an expert in houston, texas known for using wholesome and some unique ingredients. [upbeat music] ♪ - i love making frozen custard because it allows me to be creative, practice sustainability and getting the taste of houston in this product and just connecting people to where they're from. - kathleen morgan grew up on a farm outside of houston, and she's been connected to the land ever since. from sweet potato to--yes--even creamed corn, home grown texas ingredients and early childhood memories are the inspiration for all the unusual custard flavors she sells as honeychild's sweet creams. kathleen, you grew up with homemade ice cream. - yeah. - so why switch from ice cream to sweet custard? - frozen custards offer so much more flavor. it also allows me to use more all-natural ingredients. a lot of ice creams have processed ingredients and different stabilizers in them to really make them work. - yeah. - whereas frozen custards, i can rely on the eggs to do most of the work for me. - okay. - yeah, most of the inspiration for my flavors comes from my upbringing and things that resonate with me. for instance, texas sheet cake, one of my flavors, is based on a cake that was brought to every family reunion. it's one of my favorite cakes. - you buy local ingredients. why is that so important to you? - we produce so much stuff here in texas, and i really enjoy sharing that with other people. and it's important to me to also provide economic opportunity for small family farms in this area. - what are we gonna make together today? - we are gonna make peanut butter and jelly frozen custard. ♪ it's one of my favorite sandwiches--my go-to. - pb&j. - pb&j, yeah. - with your kathleen twist. - yeah, with my frozen custard kathleen twist. we're gonna do a cup of milk and a cup of buttermilk. i think buttermilk deepens the flavor. i think it also makes it less sweet. - it's got a nice tang to it. - yeah, i think so. now you're gonna do a cup of the cream. - okay, so everything's the real deal here. - you don't get the best frozen custard by cheating on ingredients. - all right, so heavy cream. - all locally-sourced and grass-fed. no we're gonna add a little bit of sugar. - okay. - we'll do a little bit of honey as well. - avocado raw honey. - yeah, the flavor's really interesting. - ooh! - it almost has a molassesy flavor to it. while that's heating, we are going to crack some eggs. - okay. - so we're gonna separate the yolks from the whites. - and so what happens to the whites? - there's a friend that i have that makes macarons. and she will bring me her yolks, i'll bring her my whites. - i love that. you guys-- there's like a community. - yeah, totally. - nothing drives me crazier than waste - yeah. - i don't care what it is. - i'll whisk if you wanna pour these in. - pretty straightforward ingredients, i would say. - yeah. well, i try and keep everything simple. try and make sure there's nothing unidentifiable. - it's all local ingredients, things you can pronounce. - mm-hmm. go ahead and put the peanut butter in while it's cooking. - so it's a peanut butter base. - mm-hmm. so we're gonna take it off and we're gonna strain it. - why are we straining this? - to get any cooked egg out. so now we're gonna make the jam. these are concord grapes and muscadine grapes. concord grapes are what you most typically think of when you think of grape jelly. and the muscadine grapes will have a little bit different flavor to 'em. - it's good. - so we're gonna add a half cup of water. so while this is cooking, we can get started on the peanut butter swirl. - okay. - add just a little bit of coconut oil to it. - okay. okay. - so this is almost ready to take off. go ahead and put 'em in the food processor. - okay, so we puree this. - mm-hmm. yes, go for it. so then we're gonna strain this back into the pan. right now, i'm just straining the skins out. to this, we're gonna add one cup of sugar. this, we'll just heat up for a little bit. and once it gets going, we're gonna add some pectin to it. what it does is it kind of thickens the liquid mixture we have here and makes it into what we know as a jelly. and we'll wanna let it cook down for about five minutes. - and then cool all the way, right? - and then cool all the way, yeah. - all right, so here is our custard. - yes. and this machine is where it will spin and freeze at the same time. - oh, look at that peanut butter. - then freeze. [machine whirring] - it's, like, dancing. - i know. [laughs] all right, if you wanna put that underneath. - oh, my gosh. - it's perfect. we'll add the swirl of this peanut butter. - wow. - the muscadine grapes and concord grapes that we cooked down earlier. we're just gonna have to swirl it in. - just get this all incorporated. - mm-hmm. it's perfect. - this'll be our special kathleen and danny's pb&j. - yeah. - let's have a taste of this. - all right. - okay. flonase relieves your worst symptoms including nasal congestion, which most pills don't. flonase helps block 6 key inflammatory substances. most pills only block one. flonase. - we now return to - ♪ only you know" on nbc. - when it's time to replace your old kitchen sponge, don't throw it away. i'll show you how to upcycle it into something that feels so good in this healthy quick tip. ♪ yes, your old kitchen sponge can be transformed into something that's really cooling and healing and fantastic. it's an upcycled sponge ice pack. ♪ and so if you've got, like, a little insect bite maybe some sunburn-- maybe you just have a sore joint like this. it just feels good to have a cold compress on there. start with just a regular, little sandwich bag. and you put your sponge on the inside. it's nice and dry. and then we do a combination of water and rubbing alcohol. the reason we do this mixture is if we did all water and you freeze it, it's gonna be too hard. it'll be, like, a block of ice and that doesn't feel good. you want it to bend and move and, like, sort of feel like a cold pillow. the addition of the rubbing alcohol actually makes the water not freeze completely. so it's about one cup of water. and then half a cup of rubbing alcohol. and then we seal this bag shut. and then just to make sure it doesn't leak, i put it inside of another bag. and when you freeze it, it feels slightly gelatin. kind of a mixture. the sponge itself can bend into shape. really goes exactly where you need it. and the best part, it's reusable. so when this thaws out, you can pop it back in the freezer and use it over and over again. ♪ does the sight of all these vegetables make you say, "yum"? or does it make you say, "ew." well, whether you love or hate vegetables, you're gonna love what you're making today. we're transforming good-for-you vegetables into general tso's brussels sprouts, sort of reminiscent of chinese take-out general tso's chicken but minus the chicken. so the very first thing we're gonna do in a non-stick pan is we're gonna heat it up. and i'm gonna put a little bit of sesame oil. i'm taking my brussels sprouts-- this is about one pound. and i've gone ahead and pre-sliced them lengthwise. you cut it in half, you actually expose the beautiful inside of the brussels sprout. and you get all these extra new surface areas that you can brown and get all crispy and caramelized and more places for this glaze to go into. so for a couple of minutes, we wanna cook up our brussels sprouts. and then i just want a little bit of salt-- until they're nice and golden brown along the edges. and we're gonna need about one cup of fresh-squeezed orange juice. it's about one to two oranges. i wanna add two tablespoons of apple cider vinegar for that tanginess. and then for heat, we do a quarter teaspoon of our chili flakes. i take a clove of garlic. and i'm just gonna smash it... chop it up... and then i'm just gonna put this into our general tso's glaze. this is called arrowroot starch. it is an herb that's from the rain forest, and it's gonna thicken up the sauce. so we do one tablespoon. we're gonna just whisk this together with a fork. now, you notice with our brussels sprouts right now, to soften them up a little bit, just add a tiny bit of water. and this will steam them from the inside out. and you just wanna wait until all of the water is completely evaporated. all right, i think it's time for our glaze. and you can see, in just a matter of seconds-- do you see how incredibly sticky... and beautifully glazed it's become, all from just a few simple ingredients. time to try it. mmm. [chuckles] so that bright, orange flavor. it's sticky, a little crunchy. that charred flavor is fantastic on the brussels sprout and it's cooked perfectly all the way through. now i'm gonna do cauliflower and radicchio steaks. ♪ something that's meaty and really can be delicious. so for your radicchio steak, for example, you just start at the top, leaving your stem intact. this is what holds your steak together. and you just cut all the way down into big wedges. and for our cauliflower, you wanna go down the middle and this is the beautiful floret, all intact. and i like to put just a little bit of salt and a tiny bit of pepper. and we're gonna use a high-heat oil for our griddle. and so this is an avocado oil i'll just drizzle it onto our grill pan. and you wanna make sure this is hot before you put anything on it. okay. we'll do two cauliflower steaks. and some of our radicchio. these are gonna cook for about three minutes on each side. and i'll show you how to make a chimichurri sauce that goes perfect for this. what i like to take is just a bunch of flat-leaf parsley. i'll take a little bit of cilantro. gonna do a rough chop. but this in our bowl. a little bit of red wine vinegar. olive oil. a little bit of salt. black pepper. let me give these a flip. they're looking pretty good. all right, garlic. and some red chili flakes. and then all you have to do is kind of whisk it together. okay, it's time to plate. let's see here. a really nice cauliflower steak, some grilled radicchio, and then i think we need some of our general tso's... glazed brussels sprouts on the side. and i just need to spoon some of our instant chimichurri sauce right on top. ♪ it's warm and charred all the way through. and the tanginess of the chimichurri--so good. and who would've thought just a few simple bags of produce of cauliflower, radicchio and brussels sprouts could be transformed into an incredible dinner. - coming up next on "naturally danny seo"... skip a trip to the store and make custom cleansers at home. - this is a great way of doing a body scrub and a soap all in one. - ♪ only you - we'll be right back to "the more you know" on nbc. from the first moment you met, it was love at first touch. and all you wanted to do was surround them in comfort and protection. that's why only pampers swaddlers is the number one choice of hospitals to wrap your baby in blanket-like softness and premium protection. so that all they feel is love. pampers the number one choice of hospitals, nurses and parents what if there were a cleaner? oh, i love the smell. that smells like morning right here. you won't believe how simple it is to make. the very first thing you need is a double boiler. and you need to find pure glycerin soap. it's vegetable-based, it feels good on the skin. and i'm gonna cut up our soap into a couple of cubes. so we just melt this. it takes about a minute or two. and you can see it melts down into this clear glycerin. and i think a tiny bit of vanilla extract is fantastic. so i just do a little splash. and then here are my used coffee grounds. you just need a tiny bit. so one or two tablespoons. then all you have to do is swirl it together. so when it's still warm what you wanna do is put them into a soap mold. you're not gonna go to the store. you have the molds already at your house. and what i have here-- you could use something that once held almond milk or orange juice. this carton is a fantastic mold. or you can save these plastic containers. and then when you peel this off, you've got a nice, round bar of soap. so great way of recycling hard-to-recycle containers into a craft project. and i think for this one, i'm gonna use our paper carton. and one of the easiest ways to do this is simply to ladle it in. and then i just pour it right in. this is a gorgeous color. so for this, i just set it aside and forget about it. and in a couple of hours, you end up with... a solid bar of soap. when you peel it open, look how smooth and perfect your soap is. you could use the whole thing as a bar of soap. it's kinda big. or you can make beautiful squares. and look at this. isn't that nice? and then something i like to do because i travel a lot is that i'll cut this into smaller pieces like this and these bottom pieces-- because of gravity and the weight of coffee grinds-- a tiny bit of the coffee grinds will actually end up on the bottom of the container. and so you have a super scrubby side right here. this is a great way of doing a body scrub and a soap all in one. that's the idea, is that when you make your own soap, you can customize it and personalize it exactly the way that you want it. that includes the scent, the ingredients and also the size. but if you don't wanna bring out a double boiler, there is a faster idea, too and that's my coffee body scrub. ♪ and start with coffee grounds. here's no real measurements here, it's just one part coffee grinds. one part brown sugar. and then the last ingredient, coconut oil. so i'll combine it all together like this. it's thick, it has enough grit to really get your skin super soft, smelling great and moisturized. i've got a bowl of water here. and all you do is exfoliate... all the rough spots-- imagine the back of your heels. your legs, your arms-- and this coconut oil is just so moisturizing.
