Back in the 1950s, Prince Philip started the duke of Edinburgh Awards. Its goal was to encourage young adults around the world to embrace selfirovement. Er the years, millions f young adults from more than 140 countries have participated in the program. And that brings us back to prince edward. He travels the world, personally attending the award ceremonies. Thats why hes here at the governors residence in nashville, tennessee. It is an honor to have you here today and twelcome his Royal Highness the prince edward, the earl of wessex. Award winners, as well. All the the Award Winners included students, scouts, members from boys girls clubs, as well as teens from miss america. Six years ago, we started this program. Ive bn involved for three and in that tie grown from one program in california, our pilot, to 30 states and the district of columbia part this year. G people taking this afternoon, we celebrate 85 recipients from tennessee nashville and the grea r area who have dedicated their time, gifts, and talents to fulfilling what it requires to meet the standards of the duke of edinburghs award. To qualify for an award, you have to participate in four areas. The idea is at by doing these activities, youll make yourself a better person, while helping others at the same time. Harrison lane. [ applause ] there are three award levels bronze, silver, and gold. Davis luvern. [ applause ] miss america 2013 was on hand to help han out the medals. What is the connection between the duke of edinburgh ard and the miss america organation . Well, the Miss America Organization is all about the empowerment of young women and our ability to kind of relate to people through community service, through physical fitness, through our style and success and scholarship dollars, and all of those things. The duke of Edinburgh Award is about all of those things, as well physical fitness, adventurous journey, and so many different aspects that help young people kind of figure out who they are and propel forward and succeed. There are probably more crowns here than i buckingham palace. How do you feel about that . I think that you are probably right, but ours are probably a little prettier. What do you think . [ laughter ] yes, i agree. day, im ac ually wearing two hats one as a reporter for teen kids news, and the otr hat. [ ding ]. I mean, crown is for being miss massachusetts outstanding teen. So for me, this is doubly excitng. Thats why im sitting in the audience. I wasnt just covering the ceremony. I was one of the teens receiving an award. We have another bronze winner kristina. [ applause ] and so, congratulations to you all. I hope you feel that th m worthwhle enjoyable at times, hard at ties but that its a good feeling now that 2 have come up ahd collec ed the award. And this is, of course, just the start of our journey, so i wish you althe very best of lj k, and i hope that youll help us to continue to reach out to ever more young people from allm sorts of backgrounds nd equip em like you z to be individuals to go on and succeed in life. And whatever you do with your lives, i hope its a fantastic success. Thank you very much. [ applause ] i think that the duke of Edinburgh Award was a great way to just interact in your community, to get involved, and to also set goals personally for yourself. I set many goals through this activity, and so i was able to achieve them. It was a great way to keep myself in track. How did you fet involved in your community with this war . I went on a campout retreat and so we were able to pick up , lot of litter in the area and improve the quality of the woods around our location. Hat was the most memorable experience when completing thism award . I guess the physical devepment. I did swming did a fivemile swim. D i think the part building up to it was very difficult, and i really enjoyed it, though. Why did you decide to go for the duke of Edinburgh Award . cause i wanted to b different from everyone else by winning my bronze. After the awards ceremony, refreshments were served outside on the lawn. His Royal Highness mingled with the crowd chatting, posing for pictures, and putting even the mo awestruck at ease. So, are these some of your yes, were l did you all dthis together, did you . Yes, sir. We did. If i had to describe the prince in one word, i guess it would be. Harming. Its pretty cool cause its like i didnt think i was gonna meet him personally. I just thought id just get the award and thats it, but he came over there and started talking to us, and so i got to hold a conversation with royalty, and that was something really cool. Like, not a lot of people can say that they talked to royalty. It was more than i expected, you know. I never expected that i would be able to see the prince of england. Id e lying if i didnt admit i was still a bit nervous interviewing royalty. Wat is the duke of edinburgh aw sorry. Can i start over . [ both chuckle ] you can do it as many times ui youd like. Thats fine. What is a duke of Edinburgh Award, and why was it started . The award is an Achievement Award for young people m probably the leading achivement award for young people which brings together a mixture of practical experiences, life skills, ahd is, i suppose, in a rather grand way trying to create the sort of global citizens of the world, and it was started back in the dare i say it . Back in the 50s, and father was very much part of the spread of the award into something that could function initially around great britain, and then it very quickly spread around, first the commonwealth, and then way beyond by word of mouth. And it was really about how to help young people going though school who are not motivated by academics and by academia and by studying, which come on most of us are not, are we, really . [ chuckles ] so, it was trying to work out, so, where your passion . What s it you might like to do . And so, it explores young peoples interests, not just in sport or physical activity, but also getting them to get involve in skills, to get involved in volunteering helping others hess fortunate than themselves and also doing an adventurous journey an expedition taking them way outside their comfort zone. And hopefully, one of those areas, youre going to [snaps fingers] connect with something or open up something which you had no idea that you were interested in. The idea behind the award is to make a difference. Please elaborate on that. a well, i think like every program, its maka difference. For us, actually, what were about really is about equipping young people for life, and life is full of challenges, and its also full of opportunities, but if you havent learned how to seize those opportunities and to len how to overcome challenges, life is gonna close down on you very quickly. So the experience and the skills that you pick up as youre going through this program having fun doing all these things are the skills that you can apply, hopefully, for the rest of your life. So, whatever challenge comes along in life, you go, okay, i can do this. You personally wanted tmake this award available in the united states. Why . I was quite keen that if americans wanted this program, thaa they should e given the opportunity to do it. Did you participate in the Award Program as a student . I did. Yes, many years ago, when i was at school, and since then ive never been allowed to escape. Ive become a trustee, and i get involved in the International Side of it, as well. I have the great privilege now of raveling around the world, meeting young people from all over the world whove gotten involved in this program and listening to their stories, as well as the amazing volunteers and adults who help them. And now the award is in 140 countries around the world and has become a huge, huge success. I mean, there are probably nearly a million young people currently participating, m striving to get their bronz, silver, and gold awards. So, its very exciting. If theres one message you would like people to know about the award, what would it be . I think the simple message is have a go. If you get the opportunity and wre trying to make that, you know, to more and more people t to get involved you know, please just have a go. It shoud be fun, and you should get a lot out of it. You dont have to have royal blood to enter the duke of Edinburgh Awards just a willingness to make a difference in yourself, your community, and maybe even the world. We know theres air pollution all around us, but rachel says it might be even closer than you think. Scientists at National Jewish health in colorado are studying how air pollution affects kids with asthma. They had kids carry air monitors for 24 hours a day outdoors and indoors. The amount of pollution that they were being exposed to was higher inside the home than outside the home for many of the kids. That could be due to the way to save energy, theyreys. Insulated. Windows are airtight. At the same time, whats staying in the house is staying in the house. The problem is that a lot of air pollution is actually in the carpet or on the soft furnitures. That means kids like jack are trapped inside with things like dust and mold. These can trigger a dangerous asthma attack. Sometimes i get dizzy and feel lightheaded, so then i feel like, in a way, im gonna pass out. So jacks mother is taking action to clear the air at home. Shes using special filters on the vacuum and checking for dust even where it can not be seen. You never know whats underneath the carpet that you have, you know, from pets or from water damage. The solution is not only dusting and vacuuming. The experts also have a very hightech idea. To freshen up the air, try opening u a window. Ironically, one of the most commonly misspelled words in english is misspelled. That might sound redundant, but its not. The word misspelled is often misspelled. So that you dont make the same mistake, remember there are two ss and two ls. Now you know how to spell misspelled correctly. Its a dish developed by the ancient aztecs easy to make and fun to ea . Ill show you how to whip up a great guacamole. Nicoles in the kitchen getting some tips from an expert chef johnny prep. This week, shes learning how to make a mean guacamole. So, i am particularly excited about this because i love guacamole. So, whats first . Well, dirst, we got to talk about avocados cause basically guacamole is predominantly avocados. Mmhmm. So, what you want to make sure is you buy as perfectly ripe as an avocado as you can get, or buy them underrpe and let them ripen at your home, because, you know, if its not ripe its too hard it doesnt make good guacamole. If its overripe, its brown anm yuckylooking, and it just doesnt make good guacamole. So, you really want to kind of feel so its just soft. It doesnt want to be real soft, but just soft. If it starts to wrinkle and stuff, thats too ripe. If its too hard, thats underripe. Just a little pinch. These are in pretty nice shape. Now what you got to do and be careful with your knife, ay . But you want to cut it in half, okay . Remember, you always need your parents permission before you use a knife. So, i like to take my knife and put it between my fingers like this, and then just so you dont want your fingers anywhere near it, right . Thats exactly right, and you can actually then rotate it once you get your cut in, you can just rotate it like that, and it cuts it right around the pit, and then you juia twist it and open it up. See how its nice and green and soft . Oh, tha ns beautiful. Yeah. Okay. Now, theres different ways of getting tat pit out. A lot of chefs will take a guacamole, okay, where itske gonna end up being smashed up anyway, you can just take it and squeeze it and pop it out. [ chuckles ] okay . Thats an easy way to do it. Okay. And then you can also just take a spoon and just. Scoop everything out . Scoop right out like that. Now, if the avocados are a little bit firmer, sometimes if you take them you just roll them like this before you cut them it actually makes them nice and soft and mushy, too. So i should roll it . Yeah, just roll it gently. See how it softens up . Oh, yeah. Softens right up, doesnt it . Mmhmm. Its almost like mashing it up for you. All right, so im gonna let you go ahead and finish off knocking off those avocados, okay . Mmhmm. And im going to talk about how to cut an onion, because basic guacamole is gonna be just avocado with some lime or lemon juice, some salt, okay . Mmhmm. And a little bit of pepper. Thats it. Thats traditionally how its served, but you also can dress it up and make it more flavorful by adding some tomato, some jalapeno, and some cilantro. Mmhmm. You can also put some finely diced onion in it, and im gonna show you technique for cutting an onion. Now, this is a nice refrigerated onion, which is a cool thing cause you know how onions kind of make you cry, you kn . Right. I dont like chopping onions because they always make me cry. Everybody says that. If you rrigerate them, it makes them less likely to do that. Mmhmm. So, now we take the very edge of the knife, and remember how i showed where youre gonna rotate the onion, instead of pushing the knife . Were gonna just pull it in and out. Mmhmm. Were gonna cut out that part right there. Were going to leave the root end attached at the back, and cut it right in half. Now, see that i put the flat side that i cut immediately down because thats the side with the juice thats gonna burn your eyes, okay . Okay. Now, this is already kind of peeled, but it looks like its got a little bit of a harder surface on it, so im gonna take that outer layer off cause sometimes thats not nice. All right, so, now i have a half of an onion with the root end back here, and im just gonna take my knife. Im gonna put little slits through it like this almost to the back, but not cutting all the way through. Mmhmm. Okay. Just like that. When i get to the other side, i turn it so im not cutting down a round slope into my hand. Mmhmm. That would be bad. And im gonna do one cut like that across, and then all you have to do it goes into a perfect dice. Mm. Wow. Just like that. Look how easy that looks. See, now, youre not crying, no, im not, but im all the way over here. How about you . Im not c2ing. [ laughs ] see . No, i mean, i tell you, if you do it quickly, you have a sharp knife, and you keep those cut sides down now, if i stand here for a while, i will, ok . Mmhm. But so far, so good. All right, so, we got our avocados going here. There, and well get the rest of this made up. Youre doing great with that. You know, you were meant to work in a kitchen. I can tell that. [ chuckles ] im trying here. Youre doing wonderful. There we go. But you got to be careful. See that little dark thing right there . You want to pull that out. Okay. Okay . Is this also part thats just a little skin. Yeah, you can get that out right there. And then you just take a fork, and you just mash it, okay . Should i do one more . Yeah. Go ahead. While im making the rest of this, you can do that now. Okay. The more guacamole, the better. Thats my motto holy guacamole. and thats it. Now, you can you know, some people like it a little bit chunkier than others. Some people like it really smooth. Mmhmm. Now, avocados are gonna turn brown on you really quick. They oxidize is the word for it. Its kind of a fancy term. Right, how do 2ou prevent that . Well, you add some acid to it, and traditionally, in mexico, they take lime juice, and they just sqeze limes in it. Mmhmm. Some people will tell yo if you leave the seed in it, it keeps it from browning, and that why is that . Do you know . I really dont know. [ chuckles ] but ive seen it work, so i believe it. In restaurants, well actually use a little bit of sour cream. Oh. m and the sour cream not only keeps it from turning colors, it actualhy gives it a little lighter, brighter lor, and it adds a little more flavor to it. Trick. Huh. Okay . Okay, im gonna season this wit just a little bit of sea salt. Mmhmm. I like sea sal cause its got some minerals it, and its got a little bit more flavor. mmhmm. Were gonna put just a little bit. Were gonna sprinkle it in there so we dont put too much in. You co d add some dreshground black pepper right now, but were gonna add some diced jalapeno for that pepper. mhmm. So i dont necessarily need tn add he freshground black pepper. So, im gonna put that finely diced without the seeds so theyre not too hot. Remember what we talked about . The pepper safety. Mmhmm. After this, im gonna go run to the sink and wash my hands. Im gonna put a little bit of cilantro in there. Im gonna put a little bit of finely diced tomato in there. All right, heres our last little bit of. Last one . Okay. Let me get that off the spoon fo you. Avocado. All right. Lets mash that up. Bit left. Res the last little there we go. Okay . All right. Were gonna put some finely diced onion in here, okay . So thats how we dress up our avocado . Thats how we dress up our guacamole. We got to kind of put a tuxedo on it. We just got some fancy guacale here. Its ready for its blacktie event. It is. This is like blacktie guacamole here. Actually, its really pretty easy, and it makes it a little bit brighter. Youll see it adds a little more complexity to it. Mmm. Its got a nice thickness to it. Oh, it does. And you know, avocados are so healthy for you. Its one of the few fruits that actually have a healthy saturated fat in it. Mmhmm. You know, youve got your tomatoes in here. I mean, this is a nice, healthy dish, and its filling. Mmhmm. Its satiating. If you eat some guacamole, youre not gonna be hungry an hour later. Mmhmm. <. You know, cause it has a nice filling effect to it. So, give it a try. See what you think. I would love to. All right. There you go. Dip some in there. Try it. See at you think. Mmm. Looks so good. Nice and fresh with tomatoes and cilantro and onions in there. Mmm. Can you taste it all . Most cities tear down their walls to make way for modern traffic. But lucca kept its walls, effectively keeping out both traffic and, it seems, the stress of the modern world. The city is a bit of a paradox. While it has europes mightiest renaissance wall, it hasnt seen a battle since 1430. Locals, like my friend and fellow tour guide gabriele calabrese, treat their ramparts like a circular park. And with plenty of rental bikes available, visitors can enjoy a lazy pedal around its 21 2mile circuit, as well. So, gabriele, this is a renaissance wall. Whats the difference between a renaissance wall and a medieval wall . Calabrese the medieval wall is thin, because they had no problem with harrows or stones. But in the renaissance time, the cannons, they became very strong, and they became a problem, so thats why it was so thick. Steves luccas wall didnt come cheap. But all that hard work and investment combined with clever diplomacy earned the city a long period of independence. And to this day, the proud lucchesi have a strong sense of identity. Rather than showcasing famous monuments, luccas appeal is in its relaxed oldworld ambience. Stroll around. Take time to let the city unfold. Romanesque churches seem to be around every corner, as do inviting piazzas busy with children at play. The main pedestrian drag is via fillungo. Strolling here, past elegant old storefronts, youll get a glimpse of luccas rich past, as well as its charming present. Piazza amphitheater was built around an ancient roman arena. While the arenas long gone, its oval shape is a reminder of the citys classical heritage. Locals have been gathering here for 2,000 years. Todays attraction a flower market. Piazza san michele also has ancient roots. Its hosted a market since roman times, when it was the forum. Today its dominated by the church of san michele. Towering above its fancy romanesque facade, the Archangel Michael stands ready to flap his wings, which, thanks to a crude mechanical contraption, he actually did on special occasions. In its heyday, lucca packed over 100 towers within its walls. Each tower was the home and private fortress of a wealthy merchant family. Towers were single rooms stacked atop each other shop, living room, and then the kitchen. This one, luccas tallest surviving tower, is famous for being capped with a bushy little forest. Those making the climb are rewarded with commanding city views, all in the shade of its amazing trees. Nearby, the church of san giovanni hosts nightly concerts celebrating the music of hometown composer giacomo puccini. Woman [ singing operatically ] steves he was one of italys greatest opera composers. Puccinis delightful arias seem to capture the spirit of this wonderful corner of italy. Where the fantastic shapes and scenery of the baja desert meet the cool dark waters of the Pacific Ocean and the warmer sea of cortez, which is often called the aquarium of the world because its packed with sea life, including whales. Here they are. Here they are, guys. That was awesome. Sea lions, and dolphins. And Cabo San Lucas offers plenty of ways to check out all the wildlife, both in the water and on land.
