Mark Mathis loves to cook. Mathis moved to Holiday Island with a dream to open a restaurant in Eureka Springs but the plan fell through when COVID hit. "I was disappointed at first but I came to realize that my dream was really just to live here and opening a restaurant was just my excuse to relocate," shared Mathis.
