and i actually called her and say that i wanted to go to culinary school, this is what i want to do. any support and i'll pay you back. and one year goes and i drop it to go work for francis. >> anthony: i love that you went from being a vegan to working with francis mallman, who is like the satan of vegans. what was at the dinner table when you grew up? >> nacho: mom wasn't that skillful. in the kitchen. >> anthony: that's cold, man. >> nacho: i know, but it's the truth. she was the one in charge. >> anthony: so you grew up eating a lot of italian food? >> nacho: yes. >> anthony: nacho's grandmother, ercillia, was born here -- the child of italian immigrants. >> nacho: i grew up around my grandmother, like constantly cooking. and that was her form of affection, in a way of like showing that she cared and she loved you. >> nacho: is it good? >> grandma: yes, it's good, but if it's too soft, it's not going to work. ♪ ♪
