Were getting on it. Oh, thats exciting. And you can see the tracks here where the other cars will go. I love trains, but i like the idea that the train goes on a boat. I think we should get a car on this and it will be a car on the train on top of the boat. Im stanley tucci. Im traveling across italy to discover how the food in each of this countrys 20 voyages as unique as the people and their past. [ speaking Foreign Language ] sicily, is a mythical land of contrasts. Fire and water. Dry and fertile. Refined but very french. And rough. [ speaking Foreign Language ] how did one of the poorest regions in europe how is it . I love it create the richest of cuisines. Thats so good. Get ready. This is delicious. Im going to take a bath in it. Every mouthful here is an eruption of flavor. Oh, my god, thats so good. Hmm mm thats so good before i arrived in cicely, theres one Delicious Food ritual that i have to experience. Its a tradition to eat these while youre on a boat passing this statue of the madonna. These are orangini. Look at that. They have rice, saffron, peas, meat. The story goes that the arabs brought these to sicily in the ninth century. Hand rolled rice with a meat filling. Breaded and fried. Thats good. The taste, i am told, is the taste of home for all sicilians. Just a few miles off the toe of the boot of italy lies the island of cicely. Its southernmost region. With volcanic oil so fertile, its known as gods kitchen. But cicely has also been known as the gates of hell. Conquered by premp the arabs to the french and haunted by its mafia connections, the locals have learned to make the most of what theyve got. In this fiercely traditional region, things are changing, and i want to discover the effect its having on the food. Classic sicilian cuisine is Hare Necessarying the power of simple ingredients and allow them to shine. Dont mistake uncomplicated for bland. You only need a Little Olive Oil and salt to relooefl sublime qualities. In a seaside town an amazing selftaught chef has built his reputation on the boisks. Basics. [ speaking Foreign Language ] he left school at 17 to work with his dad making Stained Glass for chumps, but he fell in love with food. And now owns a michelin starred rest restaurant. [ speaking Foreign Language ] tony is cooking his version of the sicilian classic. [ speaking Foreign Language ]. I see. It creates a little texture to it which helps the sauce stick to it. Which ends up giving everything a better flavor. What can be more italian than spaghetti, right . Wrong. It is said that the arabs brought spaghetti. But they ate it differently. [ speaking Foreign Language ] botarga is a solid block of dried fish eggs, tuna in this case. Tony is so proud of his signature dish, he has named it spagatonny. This is like what the romans used to make. Right. This is the secret to the flavor. This gives it that intensity. Garam was sort of like roman catchup, sort of, maybe. Tony then adds lemon zest, sicilian, of course, and an avalanche of botarrga. [ speaking Foreign Language ] on top, he adds salted, dehydrated fried capers for crunch and ground down with anchovies which is called molita. This is what people used to use because they didnt have cheese and this essentially took the place of the cheese. Come on. Oh, no. [ speaking Foreign Language ] thats beautiful. God damn it hmm i love it thank you. Its so good. Its so good. Hmmmmm thats good the core, the soul of your restaurant yes. Is taking simple food of cicely and elevating it. Yes. [ speaking Foreign Language ] it turns out tony is a culinary linguist. [ speaking Foreign Language ] jesus. I feel guilty. [ speaking Foreign Language ] i just love this idea. [ speaking Foreign Language ] i want to live with you. Its no problem. Tony, something that a lot of people arent able to create. Hes able to take these traditional foods and elevate them. He loves where he comes from and he just wants to make everything better. Thats not a bad trait. Youre strong. You power through chronic migraine 15 or more headache days a month,. The picturesque baroque town of vittoria is known for its grapes. And im parched, so im in the right place. Cicely has a reputation for being a traditional rather macho society, so until recently winemaking like many professions here was controlled by men. But the winemaker im about to meet is definitely bucking the trend. This is 38yearold ariana. So tell me everything. Today we are almost to the harvest. Yeah. So im going to the vineyards and see how the dprap is growing to be ripe. Right. These were the grape i wanted to work, because indigenous, not international. Sicilys one of the oldest wine producing regions in the world. But its wine is often thought to be too bold. Perhaps fine to blend with other wines, but nothing to be celebrated on its own. But ariana is said to be producing something more delicate. I see if the seeds inside is brown or green. Its still green and brown. Enough, enough. What should it be . Should be brown. Should be brown. Yeah. So now we need another 15 days. Its sweet. It is sweet. Its actually sweeter than i thought it was going to be. Next to arianas vineyard lie abandoned farms, a reminder that sicily has the worst Unemployment Rate in italy. Thousands of young sisilians have left the island in search of work. So you have a lot of friends left. Where did they go . What did they end up doing . They move to milan, brogna, parma. To work in engineering, economy. Ing a culture was something that was not opportunities. So the farm ends up shutting down, or the vineyard ends up shutting down. Yes. She was excited about the potential of the southern soul. Limestone is giving a lot of the perfume flavor, acidity, elegance to the wipe. Her organic wines produce lower yields but fruitier varieties. Youre from here . I grew up here. I discovered the wine when i was 16, 17. And i decided to go to study winemaking in milan. My idea at the beginning when i left was not necessarily to come back. But when i was in milan i start to miss this land a lot. You can see everything with other yoiz. You can also see the opportunities of this magic island, you know . Right. Arianas dedication is evident in every aspect of the business. So i decide to stop with the woks. I wondered how this was done. We do only by hand. This is grape. Hundred percent. This was my first label. So its my piece of art. Its your piece of art. Its my bees of art. Its beautiful. How many bottles do you make a year . 140,000. Wow and do you wane to taste something with me . Yes i thought youd never ask. This is sp 67 white. Its a blend. Now, im hardly a wine expert, but i do know what i like and that i like drinking it. This is delicious. Yeah, yeah. I want to take a bath in it. Yes, yes. Obviously, wine is quite heavy sometimes. But its light. Its light. People dont think its a sicilian wine. She has steely determination to choose a advertise nal over industrial. My mom gave me very good values, always telling me i could be able to do something. Yeah. And in a region where only a quarter of women have joined the work force, her success is nothing short of revolutionary. Did you find it difficult, particularly as a young woman to start a business . When i was 21, nobody was believing that i could work in the vineyards. That you could do it. Or have knowledge around the agriculture. So i remember for me, the most difficult side was to convince people to work with me. After ten years of work. I start to see in the eyes of other people that what i was saying was correct. Yeah. It was amazing because i say, ok, now its jyour job. People look at you and they respect you. And respect. Because yeah, yeah, yeah. Thank you. Youre welcome. Thank you so much. Today im in palermo, the capital of sicily, which is a kind of gritty city. But in recent years its seen Gent Triification with the opening of new shops, restaurants, and bars. The architecture is extraordinary. Most of it is old structures most of which are falling apart, but theyre so beautiful. It is not what i expected. Its kind of a revelation. Im excited to go through it and explore. Pa layer mow was settled in the 8th century and then the arabs arrived or conquered. These waves of migration created an incredibly beautiful city. It almost looks like new orleans. Its like the frechlg quarter, parts of it. But paler mows beauty has come at a cost. This magnificent architecture is the legacy of wealthy landowners, who built grand plazas on the grounds of their estates while the others lived in poverty. When this system collapsed in the 19th soenchry, workers moved out of the countryside and into the city where poor and rich now live side by side. Stanley. [ speaking Foreign Language ] hidden behind this door is a world ive never encountered. Ive been invited to dinner by a real live princess. Stanley. Princess stephania is one of the last surviving members of the sicilian royal family. Nice to see you. Thank you very much. [ speaking Foreign Language ] im very happy to be here. The princess became royal through marriage of a direct descendant of the northern con fest. This has been in her family since the 16th century and is preserved like a living museum. How long were you married. We married in 57. When did he pass away . Just ten years ago. He loved this house very much. Its absolutely beautiful. But as thrilled as i am to meet the princess, thats not the only reason i wanted to come here. Im on the hunt for the perfect timbalo. Look at that. So pretty. A baked bowl of rice. Eats a dish im obsessed with. Every family has a different way of making it. Yes. And ive heard that maria, the princesss chef is much an authority on it. In my family we have our own version of this dish. And its the center piece of the film i made called big night back in the 1990s. So its macaroni. Macaroni. [ speaking Foreign Language ] we have great fight. She doesnt like it. She says too much sugar. Maria is making three very different versions of her timbalo for dinner. One with eggplant, one with rice, and this one, with a pastry crust. The princesss son and her daughter are joining us for this rather formal dinner, complete with a whitegloved butler. Thank you. So this is the first one which is antipasta with cheese. Antipasta. Tell me about the tradition of timbalo. They came from are france. All the families came, thought it was good to have a french cook. They brought with them, for example, bechemel. When is this . 1850s. 1850s. I find it fascinating that even this most sicilian of dishes has origins elsewhere. Does it remember you the one that your family made . Yeah. Huge a a a aunt ofork. You need to make it with somebody. Ok. Yeah. This one is with rice. And cheese and ham. Thats very french. Which is the best for you . The eggplant. I could eat the entire which one do you like . I like the third one. Its fitting to be eating this dish in such an opulent and rich setting. I think ive stepped into a time machine to experience the origins of timbalo. Tell me how palermo has changed. Now it has become a nation pound everybodys coming. I did notice when i went out last night all these young people out. It was much more youthful than i thought it was going to be. I have a lot of friends who come from france or germany, and ive seen people falling in love with palermo. In a moving way. Right. Theres something in the life of palermo. One of the reasons for palermos regeneration is the decline of the infamous coasta hy coasta hydro tra. The mafia. It was the same place. It was full of ruined palaces and until the year of the 90s, you couldnt go inside the Circle Center because it was dangerous. And the connection between the mafia and the goeft is not as great as it once was . No. We had kind of a civil war with mafia. It ended with the killing of him. Of the judges. Yeah. They were judges who brought large scale legal action against the mafia. Exposing the governments support for the mafia. They paid the ultimate price for their bravery. Both men were designated within months of each other in palermo in 1992. From that moment it started to to change. But from the people, the people reacted. Those two judges was too much. That was the turning point. Yeah. Right. Its been a very memorable evening. Palermos ancient Alisto Accuratic families are a dying breed, how much we want to preserve the past. The heart of this beautiful city has moved elsewhere, to the young, to the new, and to the future. Thank you, if you thought sicily was the southern most island, youd be wrong, because 172 miles even further south is the Beautiful Island of lampesa. With just 5,000 inhabitants this Paradise Island was famed for its waters chock full of fish. Situated 70 miles off the african coast, its become a beacon for migrants and Asylum Seekers trying to get to europe. Thousands arrive on these shores every year. Ive come to the port to meet Third Generation bisherman beppe boleci. So beppe [ speaking Foreign Language ] hes been fishing here since he was nine, Catching Anchovies and alacha, a sardine which was once the main sustenance here. Hes invited me for lunch. His wife rinne is rumored to be one of the islands best cooks. [ speaking Foreign Language ] rinnes preparing some traditional sicilian dishes with her daughter, using some of the fish that beppes just caught. [ speaking Foreign Language ] its so simple. As you she does is dress the fish with a salsa verde, which is made of salsa, capers, bread and oil soaked in vinegar. Her second dish is more elaborate. [ speaking Foreign Language ] rinne is makeing think pecker sar sardines. But the pecker is a bird, not a fish. [ speaking Foreign Language ] [ speaking Foreign Language ] for me this dish embodies the whole philosophy of sicilian cooking. If you cant afford the food of the aristocracy, make do with what youve got. Thank you for having us. Thats so good. With the salsa verde, its so simple. Its absolutely delicious. Yeah. [ speaking Foreign Language ] she just said the fish is good. But the has provided us with this feast is also the arena of an ongoing tragedy. Over the last six years irks it has claimed the lives of an estimated 18,000 Migrants Fleeing Poth and war. As a Fisherman Beppe has firsthand experience of this crisis. I want to ask you about the immigrant situation, the migrant situation. [ speaking Foreign Language ]. In a country where migration is the leading political issue, they stand out for their compassion. The whole island was nominated for the Noble Peace Prize in 2014. Bep, e has bravely saved migrants in the past, pulling them from the sea. But after a clampdown, captains who saved them faced fines and even imprisonment. [ speaking Foreign Language ] the situation for refugees remain extremely precarious. Ive come to whats known on the island as the boat graveyard. A place where refugee boats are discarded. Desperation. Has to be so profound. To come across the ocean in a boat like that. You still see everybodys floating shoes left. The integration of immigrants into a Society Makes that society so much better and stronger and richer. Interesting to turn people away is not an option. Kevin bacon here. Green bonds give investors an opportunity not just to get a good return, but also to do good with their money as well. Green bonds are like any other traditional bond, but they come with a commitment from the company to invest in specific projects when the green bond market first started back in 2007, 2008, they were small retailtargeted transactions. Now, its over 200 Billion Dollars a year in issuance. Weve seen a full spectrum of projects being supported by green and Sustainability Bond transactions. Everything from more Energy Efficient ice cream cabinets, to better forestry and farming, through to developing affordable and social housing. The bond market is a natural home for sustainability. Buying green bonds is not just doing good, its good business. I am Navindu Katugampola and we are morgan stanley. Im back in mainland sicily, and im heading east. Im going to catanias, an an shaentd beautiful port city. Its the islands second largest city. But it does have one problem. It sits right in the shadow of mount etna. One of the most active volume kabos in the world. Somebody said i have an idea. Lets build a house here at the base of the val containo. I want to be right in the fiery maw of it. Theres a very good reason why they risk living to close to this volatile volcano, because centuries of eruptions has created mineral rich soil. Im here to visit a restaurant that uses this beautiful local produce to make classic sicilian dishes. Its owner is roberta palici. [ speaking Foreign Language ] we can come this way. Ok. Her chef is Making A Sicilian favorite made with eggplant. It was named after the opera normal, composed by perlini. So pasta dela roma is a famous sicilian dish and what were doing today is from your family. Yes. Usually it was in summer. So we put some garl wik the oil. Eggplants are a gift left by the arab domination in 19th century. They often refuse place meat because theyre cheaper and they grow everywhere. Yes, so we cook it for one hour so its marrow. What kind of pasta are you using. Its like a macaroni. Of course. Homemade fresh macaroni. What else . Anit wouldnt be a norma with baked ricotta on top. What do you think . I love it. I love it. Its so simple and its really delicate. Thank you. [ speaking Foreign Language ] yes. For the next dish robertas promised me something special. So we have Donkey Car Patch owe. I never machblgd myself or anyone else eating donkey. Its donkey . Yes. It was a donkey. It is a particularly kind of donkey. Donkeys are a favorite around here. This is delicious. Because theyve always been hard working companions for the sicilians. The meat is sweet. Yeah. J its really good. Its like Beef Car Patch owe but sweeter. Tell me about the change you made in your life. I settled in europe. And after i tonight london, it was a great experience, so i think that in a period of community, i think to come back to all the things that i love. So i love food and i love sicily and i love my family. I tonight restaurant nine years ago. Wow. Yeah. And the name of the restaurant. Tell me the name of the restaurant. [ speaking Foreign Language ] which means . When you go to the home of a compari, you always find the door open and really nice food. The idea is to create the same atmosphere that you can find in a sicilian home. Right. And everything that you had is only sicilian food and wine, so everything from sicily. Everything. True to its name, the restaurant like the house of a good friend stays open all day. Which is unusual in this part of the world. Most places close between lunch and dinner. Are sicilians different than other italians . I think that we are different from i can say in italian. Grazi, thank you. Her passion has found a perfect expression in her food. Its just extraordinary. Its some of the best food, probably, that ive ever had. The food is great but the Magic Ingredient that makes this restaurant so special is the wonderful sisillian hospitality, which helps take your mind off the active volcano looming nearby. Ks different. It is. Show me. Just hit record see that . Youre filming in 8k. Thats cinema quality. So. You can pull photos straight from video. Impressive. But will it last the whole trip . Youll have battery all day. And then more. This is different. Told you. The strength of a community. The bonds we build. Should never be broken. Because its that strength that finds the courage to make something good, truly great. Who takes care of yourself. So why wait to screen for colon cancer . Because when caught in early stages, its more treatable. Im cologuard. Im noninvasive and detect altered dna in your stool to find 92 of Colon Cancers even in early stages. Tell me more. Its for people 45 plus at average risk for colon cancer, not high risk. False positive and negative results may occur. Ask your prescriber or an online prescriber if cologuard is right for you. Ill do it. Good plan. Im staying to explore some more. A busy industrial hub, once known as the milan of the south, it has a growing migrant community. Catania is the main Reception Sentser for newcomers in sicily and this new wave is already changing the city and its food. Emmanuela, run a supper club where young refugees and migrants cook the food from their homelands and share their stories. How are you . Joy, from nigeria is now a close family friend. And mustafa a young migrant from egypt has become their young foster son and ive heard theyre both amazing cooks. This one we have care tsz, green beans and shrimps. Little shrimps . Yes. Oh dliciouses. I cant wait. Very exciting. Tonight theyre making a fusion of african dishes. This one is called fried riesz. Her special rice is along side chicken flavored with curry, rosemary and ginger. Oh, my gosh, plan tains. A type of banana fried in coconut oil. It was terrible. They couldnt swim. This is the thing so many people imagine that people leave their countries to come and take advantage. When in fact, theyre just coming because they live in fear. Theyre incredibly poor. Yes, they need somewhere safe and they want to work hard. To have a good life. So, when people say that we are good because we help them. But i always say its not true because they are helping us in finding a reason to give a sense to these moments, you know. That were fleeting. Zoe had to thank them. The story of immigration seems to have changed very little over the years. And one of its most beautiful consequences is the imprint it leaves on the cuisine. The spices that are part of all this, from egypt, have been in italy for centuries. Its why italian food in sicily is completely different than the italian food in rome. Well, i really want to thank you so much. Youre pretty great parents. Thats all i can say. From time to time we quarrel. [ laughter] throughout history, Sicilians Have shared the bounty of their generous land with newcomers, evolving the culture and creating new culinary traditions. Every new arrival brings change and the opportunity for regeneration and renewal. But one thing that wont change here is that, at the home, the door is always open and you are always welcome to join the feast. Its hard to believe that just a few months ago, the first wave of covid19 had emptied the streets of naples and italy was in lockdown. Thankfully, ive arrived during a brief moment of normality. Restaurants are open and masks arent required outside and well be sticking to the local rules. Napoli is a truly thrilling city. The second you arrive, youre engulfed by a magnificent chaos and theres no poi
