When Russ Robinson moved from Ohio to Fort Collins 20 years ago, the town didn’t have a butcher shop so he decided to open one, and Choice City Butcher & Deli sprang into being in 2004. A recent rebranding to Choice City Tap House & Craft Kitchen more accurately describes how the restaurant that shares the building with The Armstrong Hotel on College Avenue has evolved since its inception.
