Save Share Chef Adam DâSylva is relentlessly positive. The past year may have decimated the margins of his Melbourne laneway restaurants, Tonka and Coda, but you wouldnât know it to speak with him. âWe swung both restaurants into doing home delivery within days of Melbourneâs lockdown,â he says at a mile a minute. âNow we supply 30 retail stores as well. We created a whole new business out of COVID.â While other restaurateurs remained crippled by the economic uncertainty, DâSylva kept up the momentum, opening his first regional restaurant, Coda Lorne (a joint venture with the Lorne Hotel), as soon as Victoriaâs regional restrictions were lifted.
