Chef Adam D'Sylva of Melbourne restaurants Coda, Tonka and Lollo reveals his must-have cheese dish recipe

Chef Adam D’Sylva is relentlessly positive. The past year may have decimated the margins of his Melbourne laneway restaurants, Tonka and Coda, but you wouldn’t know it to speak with him.
“We swung both restaurants into doing home delivery within days of Melbourne’s lockdown,” he says at a mile a minute. “Now we supply 30 retail stores as well. We created a whole new business out of COVID.”
While other restaurateurs remained crippled by the economic uncertainty, D’Sylva kept up the momentum, opening his first regional restaurant, Coda Lorne (a joint venture with the Lorne Hotel), as soon as Victoria’s regional restrictions were lifted.
