Ammerland Black Bread/Ammerländer Schwarzbrot - Ginsberg
Well, lol, as an actor, if dress rehearsal blows opening night has a chance. I m really loving Stanley Ginsberg s The Rye Baker and am drawn especially to dense, really aromatic and really dark rye breads. I was introduced to them by my wife and her family (all Estonian), they are served constantly and I love them but never baked them.

I think a few things may be at play, just guessing. Based on the formula I didn t expect the bread to ferment so explosively, so much so that it was well above the 9 pullman by the end of fermentation. In the oven it sprung significantly.
Several of the recipes in Stanley Ginsberg’s The Rye Baker use first clear flour with the rye flour. Using high-gluten flour is also an option in these recipes. I am trying to avoid purchasing another flour that won’t be used often enough to justify its purchase. your rye recipe handy and ready to use when the rye culture is showing great promise so that that discard is used instead to make a loaf. The 70:70:70 beginning feeds can also be reduced to 20:20:20 but great care must be given to keep the starter warm and from drying out. Back splashing, or reserving some of the culture to feed while dumping the rest is important to prevent having to feed all the bacteria and yeast growing in the culture.
Later on it is possible to keep just a small amount of culture and simply make more when needed. So you may end up having a rye mother culture you maintain and keep refrigerated and a second culture that is Inoculated from that mother culture growing for the next bake.
I have the Kindle version and have no problems reading. I wonder if the reviewer was aware that you can hover over an icon and see a large page zoom of all Baker’s Percentage charts.

I purchased the Kindle edition and I would have to agree that the tables are hard to read. They can be expanded to a larger size and are even more readable on a PC screen with the Kindle viewer. But it s not so bad that I would return it.
