COPPERAS COVE â Customers were lined up in the drive-through and at the pickup window Friday for the first of a two-day grand opening for Simply Good Burgers, a business that expanded from its beginnings last year as a food truck in Killeen.
One walk-up customer, Jared Phillips, said he and his wife are moving here from Texarkana, and he decided to get some lunch while washing clothes at the laundromat across the street.
âMy son is retiring from the military and he mentioned this was about to open, so while I was letting my clothes dry, I thought Iâd walk over and get a bite to eat,â said Phillips, who normally favors the burgers at Wendyâs. âIt looks like a very simple, good menu. I just got a hamburger, no fries or anything. It should be good.â
The Killeen Food Truck Park has been operating off South Fort Hood Street for just over a year and the number of trucks has quadrupled since its inception in February 2020.
The park is located at 3101 S. Fort Hood St. in Killeen and is open from 11:30 to 8 p.m. Tuesday through Thursday, 11:30 a.m. to 9 p.m. Friday, noon to 9 p.m. Saturday, noon to 6 p.m. Sunday and it is closed on Monday.
Sabrina Hebert, one of the owners of the food truck park, said that the park started with only three food trucks and now there are 12 trucks at the park.
What started as a food truck in Killeen is in the expansion phase, beginning in Copperas Cove: Simply Good Burgers.
Co-owner Ben OâNeal said the restaurant, 301 E. Business Highway 190, is set to open at 11 a.m. May 14.
âItâs great, man. Itâs definitely great,â OâNeal said Wednesday. âItâs just an opportunity to just keep moving forward. We plan to open up more locations.â
He and his wife have had a dream to expand since they opened the food truck in early 2020.
âIn October, we decided we wanted to look at another location to expand,â OâNeal said. âAnd an opportunity came up on this spot and we just kind of jumped on it.â
