Peat is synonymous with smoke, but they’re not the same thing. Peat is the source and smoke is the by product. While Scotland has made historical use of peat smoke in whiskey, not everywhere is rich in peat bogs. And so, as whiskey makers always have, they improvise. Or they import.

Martin Laberge is the Distillery Manager at Diageo Global Supply Valleyfield. He gained a Bachelor Degree in Chemistry in 1990 and worked at Johnson’s & Johnson’s research center in Montréal from 1990 to 1996 as a research assistant for consumer products. Martin joined the Valleyfield plant in 1996 as a Production Team Leader – Process Research overseeing production from grain receiving to distillates and DDG, he also did the analytical testing required for process control and was involved in quality contro

Texas is a stand-out state in so many ways. One of these ways is the recent trend of craft distilleries popping up and grabbing attention with their unique products. Among the newest of those is Andalusia Whiskey Company’s contribution to Texan whiskey: a Bottled-in-Bond Single Malt. This expression marks one of the first Bottled-in-Bond whiskeys ever released in Texas – hailing from an act passed in 1897.

I must say that I was surprised to receive a bottle of gin in addition to the whiskies for this one. But hey, why the heck not? I do enjoy gin, especially when the sun is out. Gins have been increasingly produced in Japan and given their careful curation of spirits, I was certainly curious as to what one may find in the bottle.
