We had read up on the city and realised there was more than the justly famous wines to lure people to this Umbrian stronghold. It was too late for coffee by the time we arrived, so we decided to sample one of the white wines in one of the many wine shops (enoteca) which dot the main street, the Corso Cavour. If I remember correctly, I think we sampled wines elaborated from the Grechette and Trebbiano grapes. Barbara is more of a connoisseur than I am and she assured me that the wines had a clean, crisp finish with just the right amount of complexity. I bowed to her superior knowledge and made note of her comment for future reference.
