Green vegetables are officially back on the menu. The meteoric rise of plant-based eating and veganism – dubbed the plant-based revolution – coupled with a boom in home cooking thanks to the COVID-19 pandemic, has seen demand for leeks, broccoli and sprouts soar by as much as a third, according to TH Clements, one of the biggest UK growers of green vegetables.

WINCHESTER, Ky. (LEX 18) â Thousands of Kentucky households lost power when an ice storm barreled through the state earlier in the week.
In Clark County, hundreds of families are still waiting for power to be restored.
When Jade and Andy Novian lost power on Thursday, they were prepared to stay home.
âWe set up a tent in our living room to try to conserve space, we piled on blankets and brought our pets in there,â Jade Novian said.
The couple stayed warm the first night, but theyâve now been three days without power or any way to heat the inside of the house.

Historical titles celebrating men and women who can inspire our families
Throughout the year, and especially during Black History month, my children and I read books about African-American history and extraordinary Black Americans. The books we’ve read have spanned the struggles of enslavement and segregation, the triumph of Black artists, celebrations, and achievements, and history aside stories of Black kids just being kids. When possible, I try to share with them books whose author and/or illustrator are Black, so we can support and learn from authors and illustrators telling the story of their own heritage.
